1/2 cup vegetable oil
1/2 cup all-purpose flour
1 celery stalk, chopped
1 yellow onion, chopped
1 green bell pepper, chopped
2 cloves garlic
8 cups chicken stock
1/4 cup ketchup
2 large tomatoes, diced
1 pound sliced okra
1 cup chopped cooked chicken
1 pound lump crabmeat
1 pound large shrimp
1/2 lemon, juiced
Dash hot sauce (recommended: Tabasco)
Dash Worcestershire sauce

Steps:

  • In a heavy Dutch oven, heat oil. Add the flour and stir and cook until the mixture darkens to a brown color, about the shade of peanut butter. Add the celery, onion, green bell pepper and garlic and saute until tender.
  • Whisk in chicken stock, add the ketchup, chopped tomato, and okra. Let simmer for 2 1/2 hours. About 10 minutes before serving time add cooked chicken, crabmeat and shrimp and simmer. Add lemon juice, hot sauce and Worcestershire.

1 1/2-2 lbs cooked chicken, pieces. (About 1/2 inch)
1 lb frozen shrimp
1 lb frozen crawfish tail meat
2 lbs andouille sausages
2 cups onions, chopped
1 cup green bell pepper, chopped
64 ounces canned stewed tomatoes (Ro-tel brand best)
40 ounces frozen okra
32 ounces frozen corn
1 teaspoon black pepper
1 teaspoon garlic powder
2 tablespoons fresh parsley
4 -6 bay leaves
1 lb uncooked rice (Brown)
3 cups water
4 tablespoons chicken base (to taste)

Steps:

  • Add all ingredients, except chicken base, to 12 quart pot.
  • Heat and stir occasionally until rice is cooked through.
  • Add chicken base as desired for flavor.
  • Remove bay leaves when done.
  • Serve with bread, croutons or crackers.

½ teaspoon ground white pepper
½ teaspoon ground black pepper
1 ½ teaspoons paprika
½ teaspoon dried thyme
½ teaspoon dried oregano
1 bay leaf, crushed
1 teaspoon salt
¾ cup vegetable oil
2 cups chopped celery
2 cups chopped onion
2 cups chopped green bell pepper
1 teaspoon minced garlic
3 tablespoons file powder
2 teaspoons hot pepper sauce
1 ½ cups tomato sauce
7 cups fish stock
2 cups shucked oysters
1 cup crabmeat
1 pound small shrimp - peeled and deveined, shells reserved for stock

Steps:

  • Combine the red, white, and black peppers, paprika, thyme, oregano, bay leaf, and salt; set aside.

2 tablespoons vegetable oil
2 cups chopped onions

1 pound Italian sausage
3 (14.5 ounce) cans diced tomatoes with juice
1 pound cooked, shredded chicken
2 cups chicken broth
1 ½ cups spicy tomato-vegetable juice cocktail (such as V8®)
4 teaspoons Creole seasoning
1 pound uncooked shrimp - peeled, deveined, and tails removed

Steps:

2 quarts chicken broth
