6 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 yellow onion, halved and sliced
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
3/4 teaspoon red pepper flakes
1/2 pound baby gold potatoes, quartered
3 garlic cloves, peeled and thinly sliced
1 cup cherry tomatoes
1/2 cup red wine vinegar
1 tablespoon chopped fresh oregano leaves
1 tablespoon fresh thyme leaves
One 12-ounce can quartered artichoke hearts, drained
1/3 cup crumbled feta cheese
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 400 degree F. Heat a large, high-sided, oven-safe skillet over medium-high heat. Sprinkle the skin side of the chicken thighs with salt and pepper. Add the olive oil to the hot pan and place the chicken in the pan, skin-side down. Sprinkle the other side of the chicken with salt and pepper. Let the chicken cook until it easily releases from the pan and is golden brown, about 8 minutes. Flip the chicken and allow to cook for an additional 2 minutes. Remove the chicken to a plate and set aside.
  • Turn the heat down to medium and add the onion, peppers and red pepper flakes and sprinkle with salt. Let the vegetables cook, stirring regularly, until slightly wilted, about 3 minutes. The natural liquid from the vegetables will help deglaze the pan. Add in the potatoes and garlic and sprinkle with salt and cook, stirring occasionally, for an additional 3 minutes. Add in the tomatoes, vinegar, oregano, thyme and artichoke hearts. Sprinkle with salt and pepper and stir to combine. Turn off the heat and nestle the chicken thighs on top of the vegetables.
  • Transfer the pan to the oven and bake, uncovered, until the internal temperature of the chicken is 165 degrees F and the potatoes are fork tender, about 35 minutes. Remove the pan from the oven and sprinkle with feta cheese and parsley.

2 tablespoons chopped fresh parsley

  • Melt butter with oil in heavy large skillet over medium-high heat. Add peppers and garlic and sauté until pepper are tender, about 10 minutes. Using slotted spoon, transfer peppers to bowl.

1/2 cup shredded mozzarella cheese

Felicity's Chicken Stuffed Red Bell Peppers image

There are lots of recipes for stuffed peppers, this is mine. I served these with my Garlicky Grilled Chicken. If you wanted to serve them as a main course, you could decrease the rice & use more meat in the filling. You could also use lamb or beef as a change from chicken. I have suggested using spices to taste, because you can vary it depending on your mood or the theme of your meal. I used oregano, but you could use harissa or cumin for a middle eastern flavor or chilli for some heat... it's up to you to make my dish yours :-) Enjoy!

4 red capsicums (bell peppers)
2 cups cooked rice
1 large onion
2 stalks celery
1 medium carrot
2 garlic cloves
180 g ground chicken, cooked and crumbled
1/2 cup mozzarella cheese, grated, plus extra for topping
salt and pepper
other spices (refer to notes above)
1 tablespoon butter (optional)

Steps:

  • Cut the top off the peppers and remove the insides.
  • Chop onion, carrot, celery and garlic very finely.
  • (I use a food processor) Cook vegetables in butter until soft.
  • Combine vegetables, rice, chicken and cheese.
  • Season to taste.
  • Fill peppers with this mixture, pressing down as you go to ensure they are well stuffed.
  • Place peppers in a covered casserole and cook in a 180c oven until peppers are soft, approximately 60-90minutes.
  • To speed the cooking process, microwave the peppers for a couple of minutes before filling.
  • Once they are soft, sprinkle with additional cheese and broil until tops are golden.

1 1/2 pounds lean beef, like fillet or sirloin
2 red onions, about 1/2 pound
2 medium-size red peppers
2 tablespoons fresh lemon juice
2 tablespoons coriander seeds
1 teaspoon chopped garlic
1/4 teaspoon red pepper flakes
1/2 teaspoon cumin
4 sprigs fresh thyme, or 1 teaspoon dried
1/4 cup dry red wine
2 tablespoons honey
2 tablespoons olive oil
4 tablespoons coarsely chopped fresh coriander
Salt and freshly ground pepper to taste

Steps:

  • Preheat a charcoal grill to high or an oven broiler to 500 degrees. If wooden skewers are used, soak them in cold water until ready to use.
  • Cut the beef into 1-inch cubes. There should be 24 cubes.
  • Peel and cut the onions into 24 1-inch cubes. Reserve the remaining onion for another use. Set the cubes aside until ready to cook.
  • Cut away and discard the pepper cores, veins and seeds. Cut the peppers into 24 equal-size pieces and set aside until ready to cook.
  • Combine the meat and remaining ingredients in a mixing bowl. Blend well and marinate 15 minutes.
  • Drain the meat and arrange equal portions of meat, onions and peppers on skewers. Reserve the marinade for basting.
  • If the brochettes are to be cooked under the broiler, arrange them on a rack about 4 inches from the source of heat, leaving the door slightly ajar. Cook about 4 minutes for rare, basting with the reserved marinade and turning often. If the brochettes are to be cooked on a grill, place them on the grill and cook 4 minutes for rare, basting often with the reserved marinade while turning.

For a casual summer lunch, try this Mediterranean roast with chickpeas, vegetables and salty Greek cheese

1 garlic bulb, separated into cloves, 3 crushed, remainder left whole
2 tbsp chopped oregano
2 lemons , juice of 1, the other cut into wedges
4 tbsp olive oil
1 chicken (about 1.6kg/3lb 8oz)
3 large red peppers , deseeded and cut into large chunks
3 small red onions , cut into wedges
4 large courgettes , cut into thick wedges
3 tbsp chopped mint , plus a few sprigs to serve
200g pack feta cheese , crumbled into chunks
400g can chickpea , drained
crusty bread , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the crushed garlic and oregano with the lemon juice and 3 tbsp of the oil to make a dressing. Season. Make a few slashes in each chicken leg, then put the chicken in a large roasting tin and rub with 2 tbsp of the dressing. Stuff the squeezed lemon shells inside the body cavity. Roast for 30 mins.
  • Meanwhile, tip the peppers, onions, whole garlic cloves and courgettes into a large bowl, and toss with the remaining oil and some seasoning. After 30 mins, pile the veg around the chicken, drizzle with half the remaining dressing and roast for 1 hr.
  • Remove the chicken from the oven, lift onto a platter, cover with foil and leave to rest. Check the roasting tin, and if the chicken has rendered a lot of fat, pour it off, skim and return the juices to the tin. Stir the lemon wedges, mint, feta, chickpeas and remaining dressing through the veg and juices, then return to the oven for 10 mins to warm through. Pile around the chicken, scatter with mint sprigs and serve with bread, if you like, to mop up the juices.

500g boneless, skinless chicken thigh
2 red onions , cut into quarters
2 large roasted peppers from a jar, cut into chunky pieces
100g feta cheese
50g pine nut , toasted
200g couscous , cooked following pack instructions, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. In a large bowl, mix together the harissa paste and the vinegar, then add the chicken and onions. Spread the mixture out in a large roasting tin and roast for 35 mins, turning at least once. In the final 10 mins, add the peppers and feta, then sprinkle with the pine nuts just before the end of the cooking time. Serve with the pan juices and couscous.
