6 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper, to taste
2 tablespoons unsalted butter
8 ounces cremini mushrooms, halved
3 large shallots, diced
2 stalks celery, diced
3 cloves garlic, minced
3 tablespoons all-purpose flour
1/2 cup dry white wine
2 cups chicken stock
1 pound baby gold potatoes, halved
4 sprigs fresh thyme
1 sprig fresh rosemary
1 bay leaf
1/4 cup heavy cream

Steps:

  • Preheat oven to 325 degrees F. Season chicken thighs with 1 teaspoon salt and 1/2 teaspoon pepper. Melt butter in a large skillet over medium heat. Working in batches, add chicken, skin-side down, and sear both sides until golden brown, about 2-3 minutes per side; set aside. Add mushrooms, shallots and celery, and cook, stirring occasionally, until mushrooms are tender and browned, about 5-7 minutes; season with salt and pepper, to taste. Place into oven and bake until potatoes are tender and chicken has completely cooked through, reaching an internal temperature of 175 degrees F, about 40-45 minutes. Stir in heavy cream; season with salt and pepper, to taste. Serve immediately.

2 teaspoons butter, divided
1 cup sliced mushrooms
1 garlic clove, finely chopped
2 frying chickens, about 3 pounds each, quartered
3/4 cup flour, divided
1 teaspoon salt
black pepper
1/2 cup vegetable oil
1 cup canned tomato, undrained
water
1 1/2 cups white bordeaux wine

Steps:

  • Melt 1 teaspoon butter and lightly sautee mushrooms. Remove and set aside.
  • Melt remaining butter.
  • Add garlic and cook about 1 minute. Remove and set aside.
  • Coat chicken with 1/2 cup flour.
  • Season with salt and pepper.
  • Heat oil in a heavy skillet.
  • Add chicken and brown on all sides.

3 pounds chicken breasts
1 pound white seedless grape
2 cups Cabernet Sauvignon red wine
1 cup red currant jelly
2 cups gooseberry all fruit jam
1 tablespoon horseradish
1 teaspoon salt
freshly ground black pepper

Steps:

  • Crush grapes in a deep saucepan. Arrange chicken breasts on crushed grapes and pour wine over them. Add salt and pepper. Bring to a boil, reduce heat, cover and simmer for 1 hour. 1 cup all-purpose flour
1 cup white sugar
4 egg yolks
¼ cup rum
1 teaspoon vanilla extract
¼ teaspoon kosher salt
2 cups whole milk
2 tablespoons unsalted butter
1 teaspoon unsalted butter
2 tablespoons butter
2 tablespoons beeswax

Steps:

  • Place flour, sugar, egg yolks, rum, vanilla extract, and salt in a mixing bowl. Mix and smear into a smooth paste using a spatula. Continue mixing until flour is fully incorporated.
