I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family.

1 (12 ounce) can chow mein noodles (the crunchy kind)
2 cups celery, chopped
1 cup onion, chopped
1/4 cup green pepper, chopped
3 lbs cooked chicken, cut up
2 (11 ounce) cans cream of mushroom soup
1 (11 ounce) can water
1 tablespoon soy sauce (I prefer Kikkoman's Lite)

Steps:

  • Preheat oven to 350 degrees F.
  • In bottom of 9x13 casserole dish, put a layer of chow mein noodles followed by chicken and vegetables. Top with remaining noodles.
  • Mix soup with 1 can of water. Spoon soup mixture over vegetables.
  • Drizzle soy sauce over all.
  • Bake at 350°F for 30-40 minutes.

2 cups diced cooked chicken
1/4 cup chopped onion
1 cup finely slivered celery
1 tablespoon butter
1 (10 3/4 ounce) can cream of mushroom soup
1/3 cup chicken broth
1 tablespoon soy sauce
3 drops hot pepper sauce
1/8 teaspoon pepper
1 cup chow mein noodles
1/3 cup cashews

Steps:

  • Saute onion and celery in butter.
  • Add soup, broth, soy sauce, hot pepper sauce and pepper. Stir in chicken and simmer 5 minutes.

8 oz fresh mushrooms, sliced
1 small red bell pepper, sliced
1/2 c slivered almonds
2 minced garlic cloves
1 can(s) water chestnuts, diced
1 can(s) cream of mushroom soup
3 c chicken, cooked and cubed
2 tsp soy sauce
1/4 tsp pepper
3 chopped green onions
3/4 c mayonnaise
1 can(s) chow mein noodles

Steps:

  • 1. In large skillet, saute garlic ,mushrooms and red pepper in 1-2 tablespoons butter until soft.
  • 2. Add remaining ingredients except chow mein noodles.

  • 4. Put in 11x7 or 9x13 pan.

2 Tbsp green onions, thinly sliced
1 Tbsp butter
1 c celery, chopped
1 1/2 c cooked rice
2 can(s) cream of chicken soup
1 1/2 c milk
3 Tbsp soy sauce
3 can(s) chicken, cooked and diced
16 oz can mushrooms, sliced, drained
2 oz pimentos, diced, drained
3 oz can french-fried onions
1/2 c cashew, toasted
6 oz chow mein noodles

  • 1. In a large frying pan melt butter slowly. Add onions and and brown. Stir in celery and rice; cook for a minute to coat rice.
  • 2. Add soup, milk, soy sauce, chicken, mushrooms, pimentos French-fried onions and cashews. Mix well. Heat through.
  • 3. Pour into a greased baking dish. Cover and bake at 375-degrees for 20 minutes. Uncover and sprinkle chow mein noodles over top. Bake for an additional 10 minutes.
