2 large skinless boneless chicken breast halves.
3 tablespoons chopped fresh rosemary
2 tablespoons olive oil
1 1/2 cups thinly slice bell peppers
3 large garlic cloves, chopped
1/3 cup pitted halved brine-cured black olives (such as Kalamata)
4 teaspoons balsamic vinegar

2 large boneless, skinless chicken breast halves (1 pound total)
2 large garlic cloves
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 egg
1 cup fine fresh bread crumbs
2 tablespoons butter
2 tablespoons olive oil

  • Make 2 1/8-inch-deep slashes about 1 inch apart horizontally and vertically on the top and bottom of each chicken breast. Crush the garlic with the salt to form a paste, and stir in the pepper.
