CREOLE CHICKEN SOUP

Just put this in the slow cooker in the morning and get a whiff of heaven when you come in the door in the evening! I cook it on high heat for one hour while the family gets ready for school and work, then turn it to low before we leave for the day. This is great served with corn muffins or over rice. Lots of ingredients but, except for the okra, they are all things that most cooks have on the shelf, or in the freezer or fridge. From the folks at Rodale Press's book "Your Family Will Love It." (Mine sure does!)

Tips:

  • Use a variety of vegetables. This will give your soup a more complex flavor and texture. Some good options include celery, carrots, onions, potatoes, and tomatoes.
  • Don't be afraid to experiment with different spices. Creole cuisine is known for its bold flavors, so don't be afraid to add a little spice to your soup. Some good options include cayenne pepper, paprika, and cumin.
  • Use a good quality chicken broth. This will make a big difference in the flavor of your soup. If you can, make your own chicken broth using chicken bones and vegetables.
  • Don't overcook the chicken. Chicken that is overcooked will be tough and dry. Cook the chicken until it is just cooked through, about 10-12 minutes.
