CHICKEN DIABLE

Categories     Chicken     Bake     Quick & Easy

Yield 4 people

Number Of Ingredients 6

3 lbs chicken - I prefer legs and thighs, but wings are great if you want to use for a party
1/2 stick butter
1/2 cup honey
1/4 cup prepared mustard
1 teaspoon salt
1 teaspoon curry powder

Steps:

  • Melt butter or margarine in a shallow baking pan; stir in remaining ingredients. Roll chicken in butter mixture to coat both sides, then arrange, meaty side up in a single layer in the same pan. Bake at 375 for 1 hour, or until chicken is tender and richly glazed. Check the last 10 minutes or so to make sure chicken doesn't burn. Cover if it gets too dark.

Tips:

  • Mise en place: Before you start cooking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid scrambling to find things while you're cooking.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to distribute the heat evenly and prevent the chicken from sticking.
  • Brown the chicken in batches: If you try to brown all of the chicken at once, it will steam instead of brown. Brown the chicken in batches in a little bit of oil over medium-high heat until it is golden brown on all sides.
  • Don't overcrowd the pot: When you add the chicken to the pot, make sure that there is enough space for each piece to brown properly. If the pot is too crowded, the chicken will steam instead of brown.
  • Use a good quality white wine: The white wine used in this recipe should be a dry white wine. A dry white wine will add a bright acidity to the sauce.
  • Reduce the white wine before adding the cream: Reducing the white wine will help to concentrate its flavor and make the sauce more rich and flavorful.
  • Use a good quality heavy cream: The heavy cream used in this recipe should be a full-fat heavy cream. A full-fat heavy cream will make the sauce more rich and creamy.
  • Simmer the sauce for at least 30 minutes: Simmering the sauce for at least 30 minutes will help to develop its flavor and make it more rich and complex.
  • Season the sauce to taste: Season the sauce with salt, pepper, and any other spices or herbs to taste.
  • Serve the chicken with your favorite sides: Chicken diable can be served with a variety of sides, such as rice, pasta, or vegetables.

Conclusion:

Chicken diable is a classic French dish that is easy to make and always a crowd-pleaser. The chicken is browned in a flavorful sauce made with white wine, heavy cream, and spices, and then simmered until it is tender and juicy. This dish can be served with a variety of sides, such as rice, pasta, or vegetables. If you are looking for a delicious and easy-to-make chicken dish, chicken diable is the perfect recipe for you.
