1 cup finely grated Parmigiano-Reggiano cheese
1/2 cup finely chopped Italian parsley
5 teaspoons grated lemon peel
4 small garlic cloves, chopped
3/4 teaspoon freshly ground black pepper
1/4 teaspoon salt
12 (3- to 4-ounce) chicken or turkey cutlets, patted dry
3 tablespoons olive oil

Steps:

  • Preheat oven to 400°F. Sprinkle generous 2 tablespoons cheese on nonstick baking sheet; spread to 3 1/2-inch circle. Repeat with remaining cheese, spacing frico 1 inch apart. Bake until bubbly and golden, about 5 minutes. Remove from oven. Using metal spatula, loosen edges. Let stand 30 seconds. Transfer to platter. DO AHEAD Can be made 1 day ahead. Store at room temperature in airtight container.
  • Toss parsley and next 4 ingredients in medium bowl. Set gremolata aside.
  • Preheat broiler. Toss chicken and oil in large bowl; sprinkle with salt and pepper. Divide cutlets between 2 baking sheets. Broil 1 sheet until chicken is cooked through, about 5 minutes. Tent pan with foil; repeat with remaining cutlets.
  • Place 1 cutlet on plate; sprinkle with 2 teaspoons gremolata. Top with another cutlet; sprinkle with 2 teaspoons gremolata. Top with frico. Repeat with remaining cutlets, gremolata, and frico.

Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 small clove garlic
1/4 teaspoon kosher salt
1 lemon, zest finely minced
1/4 cup minced flat-leaf parsley
1 to 2 tablespoons extra-virgin olive oil

Steps:

  • Heat a grill pan over medium-high heat. Remove the tenderloins from the chicken breast and set aside for another use. Brush the chicken lightly with oil, then season the skin with salt and pepper. Place the chicken on the grill skin-side down, and cook until the edges turn opaque, about 6 minutes. (To get nifty cross-hatch grill marks, about half way through cooking reposition the breast about 45 degrees from their original position.) Season with salt and pepper, and turn chicken over, and cook until firm to the touch, about 6 more minutes.
  • While the chicken cooks, make the gremolata: Chop the garlic, add the salt, and continue chopping to make a paste. In a small bowl, stir the garlic together with the lemon zest, parsley and olive oil Season with pepper, to taste.
  • Slice the breasts, against the grain and serve with the gremolata.

2 Tbs. canola oil
1 cup homemade or low-salt canned chicken broth
1 Tbs. fresh lemon juice

Steps:

  • In a small bowl, combine the parsley, lemon zest, and garlic; set aside. Sprinkle the chicken with salt and pepper and coat both sides with flour. In a large, heavy skillet, heat the oil over medium-high heat. When it's very hot, add the chicken and brown on both sides, 3 to 4 min. per side. Transfer the chicken to a plate. Pour the broth and lemon juice into the skillet and boil for 1 min., stirring with a wooden spoon to scrape up all the browned bits. Return the chicken to the pan, lower the heat to medium, cover, and simmer until the chicken is cooked through, 3 to 5 min. (Total cooking time will depend on the thickness of the breasts; cut into one to see if it's done.) Transfer the chicken to a serving plate. Stir the gremolata into the pan sauce. Spoon the sauce over the chicken and serve at once.

2 tbsp olive oil
8 chicken drumsticks , skin left on
2 onions , very finely chopped
6 tbsp red lentil
400g can chopped tomato
1 chicken stock cube , crumbled
crusty bread , to serve
zest 1 lemon
1 garlic clove , finely chopped
small handful parsley , finely chopped

Steps:

  • Heat half the oil in a large flameproof casserole dish, brown the drumsticks on all sides, then transfer to a plate.
  • Add the onions and remaining oil to the pan, and cook for 5 mins or so until soft. Add the lentils, tomatoes, 1 can of water and the stock cube. Return the drumsticks to the pan. Bring to the boil, then turn down the heat, put on a lid and simmer for 30 mins or until tender. Keep an eye on the stew and add a little water if it is drying out. Remove the lid and cook for another 10 mins, or until the sauce has thickened, then season.
  • Meanwhile, make the gremolata. Mix the lemon zest, garlic and parsley together. Sprinkle over the cooked stew and serve with a chunk of crusty bread.

4 boneless skinless chicken breasts, butterflied and pounded thin to 1/4-inch
2 lemons, zest and juiced
1/2 cup chopped parsley

1 anchovy fillet, chopped (optional)
2 eggs

1/2 cup white wine
1 cup chicken stock
4 tablespoons butter, divided
3 tablespoons oil
