½ cup water
1 medium onion, chopped
1 (4 ounce) can diced green chiles
1 cup shredded Monterey Jack cheese
1 (10 ounce) package corn tortillas, warmed

1 cup water
1 teaspoon chicken stock concentrate (such as Better than Bouillon®)
½ teaspoon ground cumin
1 cup plain Greek yogurt
½ cup pepper Jack cheese

2 cups sliced fresh mushrooms
1 cup sliced green onions
2 tablespoons butter
1/2 cup white wine or chicken broth

2 cans cream of mushroom soup
16 ounces sour cream
1/2 cup sherry wine

I don't recall where I got this recipe but this is a quick and easy weeknight dinner. My family loves this dish. You can also just make the noodles and use as a side dish. Also freezes well.

12 ounces wide egg noodles
1 (1 1/4 ounce) package hidden valley ranch dressing mix
1/2 cup half-and-half (may take more)
1/2 cup parmesan cheese, add more if you like
1/2 cup butter or 1/2 cup margarine
4 whole boneless chicken breasts
8 ounces ranch dressing

Steps:

  • Cut chicken into bite size pieces.
  • Marinate chicken in the 8 ounces of ranch dressing. Marinate for 30 minutes. I normally marinate for about 8 hours (I leave it in the fridge while I am at work).
