BAKED SESAME PARMESAN CHICKEN DRUMSTICKS (OR WINGS)

Baked Sesame Parmesan Chicken Drumsticks (Or Wings) image

This is another recipe from Toronto Star. The original recipe called for chicken wings and with the skin left on. We believe however after we made it with the skin on that it would be better with the skin off. You can do it either way and let me know what you prefer. The flavour of the parmesan comes thru very nicely.

Time 1h

Yield 4 servings

Number Of Ingredients 7

1 1/2 cups seasoned Italian breadcrumbs
5 tablespoons canola oil
Kosher salt and freshly ground black pepper
8 chicken drumsticks (about 2 pounds), skin on, at room temperature
1 1/2 cups jarred marinara sauce, warmed, plus more for serving
1/3 cup grated Parmesan (about 1 ounce)
6 ounces part-skim mozzarella, thinly sliced into 1/8-inch pieces

Steps:

  • Position an oven rack on the lowest shelf and preheat the oven to 450 degrees F. Combine the breadcrumbs, oil, 1/2 teaspoon salt and 1/4 teaspoon pepper in a large resealable plastic bag. Put the drumsticks in a large bowl and toss to coat with 1 tablespoon water. Place the drumsticks in the bag with the breadcrumbs and shake well to coat, pressing the breadcrumbs firmly into the meat. Arrange the drumsticks in a circle on a 9-inch pie dish with the tips facing out (they may rest on the rim of the dish). Bake until the breadcrumbs are dark golden and the internal temperature registers 165 degrees F on an instant-read thermometer (avoid touching bone), 30 to 35 minutes.
  • Divide the sauce evenly over the drumsticks. Sprinkle the Parmesan over the top and lay 1 slice of mozzarella on top of each drumstick. Return the drumsticks to the oven and cook until the cheese is melted and bubbly, about 10 minutes. Serve.

Tips:

  • Choose the right chicken drumsticks: Look for plump and evenly sized drumsticks with no blemishes or bruising.
  • Marinate the chicken drumsticks: Marinating the chicken in a flavorful mixture of olive oil, herbs, and spices helps infuse them with flavor and keeps them moist during cooking.
  • Use a good quality breadcrumb mixture: The breadcrumb mixture is what gives chicken parmesan its signature crispy coating. Use a combination of panko breadcrumbs and grated Parmesan cheese for the best results.
  • Pan-fry the chicken drumsticks: Pan-frying the chicken drumsticks in a little bit of oil until they are golden brown and crispy adds a delicious flavor and texture.
  • Bake the chicken drumsticks: After pan-frying, bake the chicken drumsticks in a preheated oven until they are cooked through. This helps ensure that the chicken is cooked evenly and thoroughly.
  • Serve the chicken parmesan drumsticks with your favorite sauce: Chicken parmesan drumsticks are traditionally served with a tomato sauce, but you can also use other sauces such as Alfredo sauce or pesto.

Conclusion:

Chicken parmesan drumsticks are a delicious and versatile dish that can be enjoyed by people of all ages. They are perfect for a quick and easy weeknight meal or a fun party appetizer. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying meal that everyone will love.
