4 boneless skinless chicken breasts
1 cup pasta sauce
2 medium zucchini, sliced (or 2 cups broccoli florets)
1/4 cup parmesan cheese, grated
1 cup mozzarella cheese, shredded

Steps:

  • Preheat grill to a medium high heat.
  • Tear foil into 12x18-inch sheets and spray each with non-stick spray.
  • Center one chicken breast onto each sheet.
  • Spoon 1/4 c pasta sauce over each chicken breast.
  • Top each with some zucchini slices or broccoli florets.
  • Sprinkle each with some parmesan cheese.
  • Fold up sides and double fold the top and ends to seal each packet, leaving room for circulation inside.
  • Grill 15-20 minutes in a covered grill until chicken reaches a temperature of 170 degrees at the thickest part.
  • Cut small slits in top of foil to release steam.
  • Either serve in foil packets or remove from pack and place chicken on some pasta noodles. Sprinkle with mozzarella cheese before serving.

4 boneless skinless chicken breasts (6 to 8 oz each)
1 teaspoon roasted garlic-herb blend
1/2 cup ranch dressing
2 cups quartered small red potatoes
1 cup ready-to-eat baby-cut carrots, cut in half lengthwise
1/4 lb fresh green beans, trimmed
1/3 cup finely shredded Parmesan cheese

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil; spray with cooking spray. Sprinkle chicken with garlic-herb blend; place 1 breast on each sheet of foil. Drizzle 1 tablespoon of the dressing over each breast.
  • In medium bowl, place remaining 1/4 cup dressing. Stir in potatoes, carrots and green beans. Divide vegetables among chicken breasts. Sprinkle with cheese.
  • Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packs on grill over medium heat. Cover grill; cook 25 minutes. Rotate packs 1/2 turn; cook 15 to 20 minutes longer or until potatoes are fork-tender and juice of chicken is clear when center of thickest part is cut (165°F).
  • To serve, cut large X across top of each pack; carefully fold back foil to allow steam to escape.
  • To make in oven, place packs on cookie sheet. Bake at 375°F 40 to 45 minutes or until potatoes are tender and juice of chicken is clear when center of thickest part is cut (at least 165°F).

Quick, Cheap and Easy. My favorite three words. When you can't think of anything to have for dinner, these are always a hit and very versatile. You can make them ahead of time, make more than you need and have lunch for the next day.

1 chicken breast half, per packet
1 tablespoon margarine, per packet
garlic powder
italian seasoning, to taste
2 -4 small broccoli florets
potato, cut into 1 1/2-inch pieces
carrots, cut into 1-inch rounds or baby carrots
mushroom, cut in half

Steps:

  • For each chicken breast, you will need one -one foot piece of foil. Place the chicken breast in the center of the foil sheet, put the margarine, garlic and Italian seasoning on top of the chicken. Now add a little bit of each of the veggies to the chicken. Then fold the foil together on top and roll up the ends to form your pouch (packet) make as many as you want.
  • Place each of the packets on a cookie sheet with edges, and bake at 350°F for 45 minutes. To serve, I put one on each plate and unfold the packet and arrange meat and veggies on the plate as I pull out the foil from under the mixture. You will probably need to drain off the water and margarine (I usually pour part of the liquid over the whole thing for added flavor).
  • And TaDa you have a quick easy and cheap full course meal. I sometimes add a small side salad with it or maybe some fresh corn on the cob that's been steamed in foil in the oven during the last 10 minutes of cooking the packets. This is always a hit with family and friends.
