An easy one-pot dish. Delicious juicy chicken in a tomato sauce with a nice kick. Perfect with pasta and some garlic bread.

4 chicken breasts, cut into bite-size pieces
1 large onion, finely diced
2 cloves of garlic, crushed
2 red peppers, cut into bite-size pieces
2 x 400g tinned chopped tomatoes
2 tbsp Worcestershire Sauce
1/2 a lemon
1 tsp chilli flakes, alter depending on heat preference
1/2 chilli powder
250g cheddar cheese, grated
olive oil
salt
black pepper

Steps:

  • Heat a few lugs of the olive oil in a large pan on a med-high heat then add the onions, garlic, peppers and chilli powder. Fry for about 5 minutes, or until onions are softened and pale (not golden).
  • Add the chicken, with a pinch of salt and pepper, to the pan and cook until all the chicken is sealed, but not browning.
  • Keep on the heat and add the tomatoes, worcestershire sauce, juice of 1/2 a lemon, the chilli flakes and a good pinch of salt and pepper. Give a good stir and turn the heat up high. Let the sauce reach a boil and then reduce the heat to a med-low setting. Cover the pot and allow to simmer for 45 minutes, stirring occasionally.
  • With about 15 minutes left to cook, put on some pasta . I recommend a tagliatelle, fusilli, conchiglie or penne.
  • Once the sauce has been on for a good 45 minutes and has reduced slightly, remove from the heat and add the cheese. Stir to make sure it has melted through the sauce. Then drain off the pasta and add the the pot with the sauce, give a good stir to mix the pasta. Serve in a bowl, or high-edged plate, with some garlic bread on the side.

1 tbsp olive oil
2 tbsp butter
4 boneless, skinless chicken breast
1 garlic clove, finely chopped
1 onion, chopped finely
1 chicken bouillon cube
125ml water
175ml milk
300ml double cream
6 spring onions, sliced diagonally
35g freshly grated Parmesan cheese
450g dried fettuccine
fresh leaf parsley, chapped to garnish
salt and pepper to season

Steps:

  • Using a heavey based frying pan, heat the oil and the butter and add the garlic to a low heat. After a minute add the chicken breasts to the pan and cook for 5 minutes on each side, or until the juices are no longer pink.
  • When ready, remove the chicken breast from the pan and slice diagonally into thin strips and set aside.
  • Meanwhile, add the onions to the used pan and cook gently for 5 mintues until they become soft.
  • Crumble the bouillon cube over the top and add the water. Bring to the boil and leave to simmer for around 10 minutes.
  • Once the liquid has reduced stir in the cream, milk, Parmesan and spring onions. Season to taste with salt and pepper. Boil once again then leave to simmer for around 10 minutes until the sauce has thickend.
  • While the sauce is thickening boil a pan of lightly salted water with a little olive oil. Add the fettuccine and cook for 5 minutes till tender yet still firm or to the guidlines on the packet. Drain and transfer to a warmed bowl. Layer the chicken slices over the top and once the sauce is ready pour over the top of the chicken. Garnish with parsely and serve.

4 skinless, boneless chicken breast halves

2 cups shell pasta
2 tablespoons canola oil
4 boneless skinless chicken breasts, cubed
4 cups 2% low-fat milk

1/4 cup butter
1/2 small yellow onion or shallot, finely diced
1 clove garlic, minced
1 heaping tablespoon flour
16 ounces heavy whipping cream
1/8 teaspoon of each: salt, pepper, oregano and parsley
3 ounces sun dried tomatoes
2 cups shredded chicken*
1 cup pasta water, reserved
2 tablespoons fresh basil, minced
1/4 cup parmesan cheese, grated or shredded

Steps:

  • Cook pasta according to package instructions. Reserve up to one cup of pasta water for later.
  • In a large, non-stick skillet, melt butter over low heat.
  • Add onion and saute for 2-3 minutes. Add garlic, saute for another minute.
  • Add flour and stir quickly over low heat, until the mixture is well combined and foaming.
  • Add cream and simmer for 4-5 minutes, stirring constantly, until it just starts to bubble. The sauce should thicken a bit. Add spices, sun dried tomatoes and chicken. Continue to stir for 1-2 minutes to soften dried tomatoes.
  • Add cooked pasta to skillet, stirring with sauce to combine. If the sauce is too thick, slowly introduce some pasta water to loosen it up and get the pasta coated. I add 1/4 cup of pasta water at a time. You may not need all of the pasta water that you reserved.
  • Top with fresh basil and Parmesan cheese.

1 lb chicken ((skinless, boneless chicken breasts or tenderloins))
1 teaspoon paprika
1 teaspoon Italian seasoning ((thyme, oregano, basil - combined))

1.5 cups heavy cream
1/2 cup Parmesan cheese (shredded)
5 tomatoes ((medium, chopped in large cubes))
3 cups fresh spinach (or 1 cup cooked spinach)

Steps:

  • Heat 2 tablespoons of olive oil in a large skillet, on medium-high heat. Add chicken and cook on one side on medium-high heat for 4 minutes. While it cooks, sprinkle the uncooked sides of the chicken with paprika, Italian seasoning, and salt. Flip the chicken over, and cook on the other side for 3 more minutes on medium-high heat. Reduce heat to low-medium, flip chicken over again and cook, covered, for several minutes until no longer pink in the center. Remove chicken from the pan and keep chicken warm.

Add 1/3 of the cooked chicken (sliced into small strips) and half the bacon (already cooked and drained of fat). Mix everything. Remove from heat.
  • In the meantime bring a large pot of water to boil, add pasta, and cook according to instructions (usually 10 to 15 minutes). Drain the pasta.
  • Add cooked pasta to the skillet with the sauce and reheat on low heat.
