After eating chicken piccata in many restaurants and finding many that were 'greasy,' I came up with this recipe through much trial and error. It has wonderful flavor and is even better the next day! I like to serve it over angel hair pasta or linguine.

- Serve the chicken and sauce over linguini or rice and garnish with the capers.
Tips:
- Use a good quality chicken. Free-range, organic, or air-chilled chicken will all produce a better-tasting dish.
- Don't overcrowd the pan. If you do, the chicken will steam instead of sear, and you'll end up with a soggy dish.
- Cook the chicken over medium heat. This will help to prevent the chicken from overcooking and becoming dry.
- Use a well-seasoned pan. This will help to prevent the chicken from sticking.
- Don't be afraid to add a little butter. Butter adds a rich flavor to the dish and helps to keep the chicken moist.
- Use fresh lemon juice. Fresh lemon juice has a brighter, more vibrant flavor than bottled lemon juice.
- Don't skimp on the capers. Capers add a salty, briny flavor to the dish that is essential to its overall flavor profile.
- Use a variety of artichoke hearts. Canned, jarred, or frozen artichoke hearts can all be used in this dish. If using canned or jarred artichoke hearts, be sure to rinse them thoroughly before using.
- Serve the chicken piccata immediately. This dish is best enjoyed fresh out of the pan.
Conclusion:
