Chicken portobello stroganoff is a delicious, creamy dish that is perfect for a weeknight meal. The chicken is tender and juicy, the portobello mushrooms are earthy and flavorful, and the creamy sauce is the perfect complement to both. This dish is also relatively easy to make, and it can be tailored to your own tastes. For example, if you like a little bit of heat, you can add some cayenne pepper or red pepper flakes to the sauce. Or, if you prefer a milder flavor, you can omit the mushrooms or use a different type of mushroom, such as cremini or shiitake.

Stroganov used to be a dish of sauteed beef with sour cream in 19th century Russia. This modern chicken and portobello version is the result of having opened the fridge for dinner one night to find nothing much but necessity, the mother of invention. -Katie Rose, Pewaukee, Wisconsin

Tips:
- Mise en place: Before you start cooking, make sure you have all your ingredients and equipment ready. This will help you stay organized and avoid scrambling.
- Cook the chicken and mushrooms separately: This will help ensure that both the chicken and mushrooms are cooked evenly.
- Use a heavy skillet or Dutch oven: This will help to evenly distribute the heat and prevent the food from burning.
- Don't overcrowd the pan: If you overcrowd the pan, the food will not cook evenly.
- Season to taste: Taste the sauce before serving and adjust the seasonings as needed.
