  • BROWN chicken in oil in large frying pan on medium heat for 5 minutes on each side; remove from pan.

¼ cup extra virgin olive oil, Private Selection Italian
4 tablespoons lime juice
2 tablespoons agave nectar
4 teaspoons kosher salt, divided
1 teaspoon dried oregano
2 teaspoons chili powder
3 teaspoons ground cumin, divided
1 lb boneless, skinless chicken thighs
1 small yellow onion, sliced
1 medium green bell pepper, seeded and sliced
1 medium yellow bell pepper, seeded and sliced

1 cup white long grain rice, rinsed
1 ½ cups chicken stock
1 teaspoon black pepper

Steps:

  • In a shallow dish or medium bowl, whisk together the olive oil, lime juice, agave, 1 teaspoon of salt, the oregano, chili powder, and 2 teaspoons of cumin. Add the chicken and toss to coat well. Cover with plastic wrap and marinate in the refrigerator for at least 30 minutes, up to 4 hours.
  • Preheat the oven to 400˚F (200˚C).
  • Remove the chicken from the marinade and place in a large oven-safe pot over medium-high heat, being careful not to overcrowd the pot. Cook for 3 minutes, or until golden brown, then flip and repeat on the other side. Remove the chicken from the pot and set aside.
  • Add the onion and bell peppers to the pot. Cook for 2-3 minutes, or until starting to soften.

I found this on a card supplied at the butcher's counter at Harris Teeter Grocery. The only change I made was to omit the marjoram leaves due to personal preference but I've added it back to the recipe as an option here. If you don't have bone-in chicken breasts you can use bone-in chicken thighs (about 10 thighs or 3 1/2 lbs). Remember to remove the skin of the chicken and any really visible fat deposits.

6 slices bacon, diced
1/2 cup sweet onion, chopped
1/4 cup celery, finely chopped

Basically it's a Campbell's chicken and soup recipe that I had tweaked. I had 4 hungry friends over and no real food or money since where in college (this is a cheap dinner to make and easy to double good for big families). All I had on hand was chicken and rice and mushroom soup. Lucky I had a few spare items on hand. I didn't like the idea of chicken just sitting there in cream of mushroom soup for an hour in the oven with rice. So I tweaked it with white wine and made it on the stovetop we couldn't wait an hour. With the brown bits it made the greyish looking soup into a pretty golden color and the garlic woke everything up. The Uncle Ben flavor rices are awesome--when you're in a pinch I totally recommend them. You can also use egg noodles--it makes it a bit more richer. Ever since then, I get this request about twice a week and people still don't believe its cream of mushroom soup--who knew !

1 (8 7/8 ounce) packet of uncle ben's garlic and butter flavorful rice pilaf mix

3 garlic cloves, mashed

  • In a saucepan, add oil and 2 tablespoons of butter; let melt and then add chicken breasts. Cook until golden brown and juices run clear.
  • While chicken is cooking, follow package directions for rice (it takes about 10 to 15 minutes I've found).
  • In saucepan deglaze pan with wine.
  • Don't get rid of those yummy brown bits--it gives this sauce flavor.
  • Add garlic, cream of mushroom soup and milk; stir until creamy.
  • Add cheese.
  • When rice is cooked, pour into mushroom mixture. Add chicken and season with salt and pepper.
  • Let cook for another 5 minutes.
  • Serve with salad and garlic bread. Serves 4.
  • You can also leave the rice separate and just put the chicken in the sauce--either way, it's your choice.

1 can(s) 10.5 oz chicken broth
1 c mild pace picante sauce
1 tsp cumin
1 Tbsp olive oil (I prefer)
1 c minute rice (or any brand instant rice)
1 c black beans rinsed and drained
1 c frozen whole kernel corn
1/2 c shredded cheddar cheese

  • 1. Heat 1 Tablespoon oil in a 10-inch skillet over medium heat.
  • 2. Add the rice and cook and stir until its golden.
  • 3. Stir in broth, picante sauce and cumin and heat to a boil. Cover and cook for 15 minutes
  • 4. Reduce the heat to low, stir in the canned chicken, beans, and corn. Top with cheese and cover and cook for 5 minutes.
  • 5. Burrito Variation: Do steps 1 to 3. Then for step 4 omit the beans and corn and cook the drained chicken with the rice mixture for 5 minutes. In a hot skillet place one tortilla in pan and heat about 10-15 seconds per side until warm and flexible. Place tortilla on a plate; add a portion of the chicken, and rice mixture and top with cheese. Make sure all ingredients are near the middle of the tortilla. Starting from the end closest to you, fold tortilla just over the middle, covering the filling. Carefully fold in both side of the tortilla over the filling, then finish folding to the end, wrapping it all up.
