Steps:
- Toss together the chicken, celery, scallions, dill and parsley in a large bowl.
- In a small bowl, whisk together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix gently until combined. Refrigerate until ready to serve.
- Put the parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. Lower the heat to very low and cover. Poach the chicken until firm to the touch, about 20 minutes. Remove the pan from the heat, uncover and cool the chicken in the liquid for 30 minutes.
- Transfer the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and roughly chop the meat into about 1-inch pieces. Discard the bones and skin.
- Strain the broth and store, covered, in the refrigerator for 3 days or freeze for later use. Remove any fat from the surface of the broth before using.

Steps:
- Place romaine, tomato, celery, cucumber, green beans, herbs, and chicken in a large bowl; toss to combine. Drizzle with vinaigrette just before serving; toss to combine.
Tips:
- Choose high-quality ingredients: The quality of your ingredients will greatly impact the taste of your chicken salad. Use fresh, free-range chicken, crisp celery, and flavorful mayonnaise.
- Don't overcook the chicken: Overcooked chicken will be dry and tough. Cook the chicken until it is just cooked through, then remove it from the heat and let it cool.
- Use a variety of textures: A good chicken salad should have a variety of textures. Add crunchy celery, chopped nuts, and soft grapes or cranberries for a more interesting salad.
- Season the salad to taste: Add salt, pepper, and other seasonings to taste. You can also add a squeeze of lemon juice or a dollop of Dijon mustard for extra flavor.
- Chill the salad before serving: Chilling the salad will help the flavors to meld and develop. Serve the salad on a bed of lettuce or greens, or in a sandwich or wrap.
Conclusion:
Chicken salad is a delicious and versatile dish that can be enjoyed for lunch, dinner, or a snack. With a few simple ingredients and a little bit of time, you can make a delicious chicken salad that is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give chicken salad a try!
