3/4 lb fresh snow pea pods (3 cups), trimmed, cut in half crosswise
3 cups cubed cooked chicken or turkey
3/4 cup sliced green onions (12 medium)
1 can (8 oz) sliced water chestnuts, drained
Lettuce leaves, if desired
1/3 cup slivered almonds, toasted*
3/4 cup mayonnaise or salad dressing
2 teaspoons soy sauce
1/4 teaspoon pepper
1/8 teaspoon ground ginger

Steps:

  • Cook pasta as directed on package, adding pea pods during last 1 to 2 minutes of cooking. Drain; rinse with cold water to cool. Drain well.

2 cups fresh pea pods, trimmed and blanched
2 cups cooked chicken or 2 cups turkey
1/2 cup green onion, sliced
1/2 cup water chestnut, sliced

1 ½ cups uncooked wild rice
6 cups water
⅓ cup tarragon vinegar
3 tablespoons Dijon mustard
1 tablespoon white sugar
1 teaspoon salt
1 clove garlic, minced
1 teaspoon dried tarragon, crumbled
½ teaspoon black pepper
½ teaspoon crushed red pepper flakes
⅔ cup safflower oil
3 cups cubed cooked chicken
1 cup sliced celery
½ cup chopped fresh parsley
½ cup sliced green onion
½ pound sugar snap peas, strings removed
½ cup toasted slivered almonds

  • Bring the wild rice and water to a boil in a saucepan over high heat. 1/4 cup roasted white sesame seeds
1/4 cup mayonnaise (preferably Kewpie brand)

1 tablespoon unseasoned rice vinegar
2 teaspoons toasted sesame oil
1 teaspoon granulated sugar
