2 teaspoons minced shallot
1 1/2 teaspoons honey
3/4 to 1 teaspoon minced habanero or jalapeno chile, stemmed and seeded
6 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
1/4 cup finely chopped pineapple
1 bunch (3/4 pound) watercress, thick ends trimmed
5 ounces baby spinach
1/3 cup toasted cashews, chopped
3/4 pound cooked chicken breast, shredded

4 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon lemon-pepper seasoning
1 can (8 ounces) unsweetened sliced pineapple
3 tablespoons vegetable oil
2 tablespoons soy sauce
1 tablespoon vinegar
1 tablespoon honey
1/4 teaspoon ground ginger
8 cups assorted vegetables (lettuce, red onion, carrots, sweet red pepper and broccoli)
Salted peanuts, optional

Steps:

  • Sprinkle chicken with lemon-pepper. Grill over medium-hot heat or broil 4-6 in. from the heat for 15-18 minutes or until juices run clear, turning once. Set aside and keep warm. Drain pineapple, reserving 2 tablespoons juice (discard remaining juice or save for another use); set pineapple aside. In a jar with a tight-fitting lid, combine oil, soy sauce, vinegar, honey, ginger and reserved pineapple juice; shake well. Brush some of the dressing over pineapple; grill or broil for 2 minutes. Cut chicken into strips. Arrange vegetables on serving plates; top with pineapple and chicken. Sprinkle with peanuts if desired. Serve with remaining dressing.

1 onion, julienned
1 clove garlic, minced
1 cup stemmed and julienned shiitake mushrooms

6 leaves butter lettuce, washed
1 red bell pepper, stemmed, seeded, and julienned
2 scallions, cut on bias
1 zucchini, julienned
1 cup shredded red cabbage
2 tablespoons chopped fresh cilantro leaves
1 cup pineapple chunks in juice, drained
1 cup Thai Citrus Dressing, recipe follows
1 cup fresh squeezed tangerine juice, or orange juice
1 tablespoon fresh squeezed lime juice
