Steps:
- Make a light white sauce: Melt butter in small pan. Add flour, mixing well, and let cook for three minutes or so, making sure it doesn't brown. Slowly add milk, mixing well, until sauce forms. Cook sauce for maybe five minutes to thicken. Add salsa to sauce -- maybe half to two-thirds cup. Add about a cup and a half of rice, about a cup of chicken and about two tablespoons sour cream to sauce. Add more of the above as necessary to achieve creamy casserole texture. (You can add corn or other vegetables, as well.) Pour into casserole dish. Top with grated cheese and crumbs. Bake at 350 until bubbly. Serve with more salsa for topping at table.
Tips:
- When choosing chicken for the casserole, boneless, skinless chicken breasts or thighs can be used. For a more flavorful dish, consider using a combination of both.
- For a spicier casserole, use a salsa that is medium or hot in spiciness. If you prefer a milder dish, use a mild or medium-mild salsa.
- To add more vegetables to the casserole, consider adding chopped bell peppers, onions, or corn. These vegetables will add flavor and texture to the dish.
- If you want a cheesy casserole, add shredded cheddar, mozzarella, or Monterey Jack cheese to the top before baking. This will give the casserole a golden brown crust and a gooey, melted cheese center.
- To save time, use a pre-made salsa and a rotisserie chicken. This will cut down on the prep time for the casserole.
Conclusion:
Chicken salsa casserole is a versatile and easy-to-make dish that can be enjoyed by people of all ages. With its combination of savory chicken, flavorful salsa, and creamy cheese, this casserole is sure to be a hit at your next potluck or family gathering. So, gather your ingredients, preheat your oven, and get ready to create a delicious and satisfying meal that everyone will love!
