1 pound skinless, boneless chicken breast halves - cut into 1 inch strips
3 tablespoons canola oil
2 yellow pear tomatoes, stems removed
¼ cup chopped red onion
1 fresh jalapeno pepper, seeded and chopped
1 clove garlic, crushed
3 tablespoons chopped fresh cilantro
½ lime, zested and juiced
salt and freshly ground black pepper to taste
1 pre-baked thin pizza crust
8 ounces shredded pepperjack cheese

Steps:

  • Preheat over to 450 degrees F (230 degrees C). In a small bowl, combine paprika, garlic powder, salt, black pepper, onion powder, thyme, oregano, and cayenne. Sprinkle liberally over chicken. Store any remaining mixture in airtight container for later use.

1/4 cup canola oil, plus more for brushing dough
2 to 3 tablespoons Big Daddy's Taco Rub, plus more for seasoning, recipe follows
1 (16-ounce) tube pizza dough, store-bought
Flour, for work surface
1 cup shredded mozzarella
1 cup shredded sharp Cheddar
1 cup Guacamole, recipe follows
1 cup Lime Chipotle Salsa, recipe follows
1/2 cup sour cream
1/4 cup chopped fresh cilantro leaves
1 tablespoon freeze-dried onions
1 tablespoon freeze-dried garlic
1 teaspoon freeze-dried oregano
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon coarsely ground black pepper
1 teaspoon cayenne
1 teaspoon ground cumin
1 tablespoon salt
1 tablespoon chili powder
1 avocado, halved, pitted and flesh diced small
1 lime, juiced
1/2 teaspoon ground cumin

  • Preheat grill to medium-high heat.

I find this pizza great for leftover chicken, but you can use raw chicken breasts and cook them up. Also, because of the taste of salsa, you don't need as much cheese or sauce, which makes it healthier. I prefer to use homemade half-whole wheat pizza dough, but any dough will work.

1 pizza crust
1 boneless skinless chicken breasts, cut into strips or 1 enough leftover chicken to cover one pizza crust
1 cup assorted fresh vegetable, for example, green peppers, mushrooms, red onions
salsa
cheddar cheese or tex-mex cheese

  • Prepare the pizza dough.
  • If using raw chicken breast, fry strips in oil until cooked through, but not totally done. Halfway through cooking add vegetables and sautee until soft. If using leftover chicken, you can just sautee the vegetables, or leave them raw and put all the ingredients in a bowl.

1 small read onion

1 avocado, sliced

1 4-ounce boneless, skinless chicken breast half
1 tablespoon Instant Gourmet Carribean Isles
1 tablespoon olive oil
1/2 cup sliced shiitake mushrooms
1/2 cup Prissy Vidalia Onion barbecue sauce
1/4 cup Cotija, grated
1/2 cup Asadero, shredded
1/4 cup Añejo Enchilado, crumbled
Mango Salsa
1/2 ripe mango, diced
2 tablespoons diced red onion
1 tablespoon diced ripe tomato
1 tablespoon olive oil
1-1/2 teaspoons 2 leaf balsamic vinegar
1 teaspoon chopped fresh mint, basil or cilantro, or mixture of all three

  • 1. To make dough: a. In a small bowl, combine 1/4 cup water, yeast, and sugar and stir well to combine. Set aside for 5 minutes. b. In a large mixing bowl, combine all-purpose flour, semolina flour and salt. c. Add olive oil to the yeast mixture. Stir well and add to flour. Add additional 1/2 cup warm water. d. Bring the mass of dough together until a compact ball is formed. Turn dough out onto work surface and knead vigorously for 7 minutes until smooth and satiny. e. Place a small amount of olive oil in a large bowl. Put dough in the bowl and turn it twice to coat. Cover bowl with plastic wrap and a kitchen towel. Set the bowl in a warm place. f. Allow dough to double in bulk, about 1 hour. Punch down dough and let stand for 20-30 minutes at room temperature before using. g. Roll dough into a circle about 10 inches in diameter, building up the edges slightly. Place dough on a pizza pan or baking sheet. 2. To prepare toppings: a. Coat chicken with jerk seasoning. Heat olive oil in a saute pan and when hot, sear chicken on both sides. b. Remove chicken from pan, add mushrooms to pan, and saute them for about 1 minute. c. Drain liquid from pan. Slice chicken into thin strips. 3. To prepare salsa: In a small mixing bowl, combine and mix thoroughly all ingredients. 4. To assemble pizza: a. Spoon barbecue sauce onto dough. b.
