Number Of Ingredients 8

1 3/4 cups water (divided)
1 (5 5/8 ounce) box of flavored couscous (I prefer Toasted Pine Nut Flavor or Parmesan)
5 tablespoons butter, divided
4 tablespoons flour
1 teaspoon seasoning salt
1 lb boneless chicken cutlet (usually 3 cutlets)
1 tablespoon capers
1/2 lemon, juice of (@ 1 TBL.)

Steps:

  • In a medium sauce pan, combine 1 1/2 cups water, spice package from couscous, and 2 TBL.
  • of butter.
  • Heat to a boil.
  • Add couscous, cover and set aside.
  • Put salt, and flour in a large ziplock bag and shake to mix ingredients.
  • Add chicken and shake to coat.
  • In a medium saute pan melt 2 TBL.
  • of butter and and cook chicken until golden brown, do not turn chicken while cooking.
  • Now turn chicken and add capers, lemon juice, 1 TBL.
  • of butter and 1/4 cup water.
  • Cook 2-3 minutes until sauce starts to thicken.
  • Serve over couscous.

From the Something Natural restaurant in Nantucket, MA as seen on Rachael Ray's $40 a Day. This is a very flavorful, no mayonnaise, chicken salad that is excellent served on croissants, multi-grain bread or salad greens. I have adapted to use 1/2 c. sour cream and 1/2 c. yogurt rather than 1 c. yogurt. Be sure to taste as you season because flavor may vary depending on the strength of your curry powder and Dijon mustard.

1 1/2 lbs boneless and skinless cooked chicken, cooled and cut into small cubes
1/2 cup plain nonfat yogurt
1/2 cup sour cream
1/4-1/2 cup Dijon mustard, to taste
1 1/2 tablespoons curry powder
1/2 tablespoon ground cumin
1/2 teaspoon cayenne pepper, plus more to taste
1/2 cup raisins or 1 cup halved red seedless grapes
kosher salt, to taste
fresh ground black pepper, to taste
1/2 cup cashews
croissants or salad greens

Steps:

  • In a large bowl, combine yogurt, mustard, curry powder, cumin, and cayenne pepper. Add the cubed chicken and raisins. Season with salt, pepper and more cayenne, if desired. Refrigerate 30 minutes to allow flavors to blend.
  • Mix in the cashews right before serving so they stay crunchy. Serve as a sandwich on bread or on a bed of lettuce as a salad.

THE quickest, easiest, Most Delicious Chicken and rice casserole EVER. I found this recipe when I was 18 and have tweaked it to perfection. I hope you love it as much as I do!

4 boneless skinless chicken breasts
6 tablespoons margarine or 6 tablespoons butter
1 (1 7/8 ounce) packet dry onion soup mix
1 (10 3/4 ounce) can cream of mushroom soup
1 cup uncooked quick-cooking rice
2 cups water

Steps:

  • in a 9x13-inch baking dish melt butter or margarine.
  • place chicken breast in and season with pepper.
  • Sprinkle onion soup mix over breasts, spread mushroom soup over breasts and sprinkle the rice evenly over all.
  • Pour 2 cups of water over the dish and seal with foil.
  • Bake at 350°F for 1 hour.

This is an easy chicken and rice casserole that I have loved since I was a little girl!

4 skinless, boneless chicken breast halves
½ cup butter
1 pinch salt
1 pinch ground black pepper
1 (1 ounce) package dry onion soup mix
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup uncooked white rice
2 cups water

Steps:

  • In a 9 x 13 inch baking dish, melt butter or margarine. Salt and pepper chicken pieces, and place them in dish. Sprinkle with onion soup mix, add mushroom soup, and spread dry rice evenly over all. Add 2 cups of water. Seal with foil.
  • Bake at 325 degrees F (165 degrees C) for approximately 1 hour .

I got this off the back of a shake n bake box. The recipe calls for bbq sauce but i have been playing around with different flavors.

1/2 c bbq sauce or any salad dressing of your choice (might need a little more)
1 pkg shake n bake (might need 2 depending on the thickness of wet ingredient you use)
8 small boneless skinless chicken breast

Steps:

  • 1. Pre heat oven to 400 degrees
  • 2. Place bbq sauce or salad dressing (I have used Ranch, Italian, and Honey Mustard) and shake n bake mix in separate shallow dishes.
  • 3. Dip chicken in sauce coating very well, then in coating mix be sure to coat all.
  • 4. Bake in a foil lined pan for 20 minutes at 400 degrees or until done.
