1 broiler/fryer chicken (3 to 4 pounds), cut up
1 to 1-1/2 teaspoons cayenne pepper
3/4 teaspoon salt
3 tablespoons canola oil
1 package (14 ounces) smoked sausage, sliced
1 large sweet onion, chopped
1 medium green pepper, chopped
1 celery rib, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained
1 package (16 ounces) spaghetti

Steps:

  • Sprinkle chicken with cayenne and salt. In a Dutch oven, heat oil over medium-high heat. Brown chicken in batches. Remove from pan., Add sausage, onion, green pepper and celery to same pan; cook and stir over medium heat 3 minutes. Add garlic; cook 1 minute longer. Stir in tomatoes. Return chicken to pan; bring to a boil. Reduce heat; simmer, covered, until chicken juices run clear, about 1 hour., Cook spaghetti according to package directions. Remove chicken from pan. When cool enough to handle, remove meat from bones; discard skin and bones. Shred meat with 2 forks; return to pan. Bring to boil. Reduce heat; simmer, uncovered, until slightly thickened, 8-10 minutes. Skim fat. Drain spaghetti; serve with chicken mixture.

1 green bell pepper, chopped
½ cup butter
½ cup all-purpose flour
1 teaspoon salt
¼ teaspoon ground black pepper
1 ½ teaspoons chicken bouillon powder
1 ½ cups milk
1 ¼ cups hot water
4 cooked, boneless chicken breast halves, chopped
4 ounces chopped pimento

  • Cook and stir drained mushrooms and green pepper in butter or margarine over medium heat for 5 minutes. Remove from heat.

8 skinless, boneless chicken breast halves
1 (8 ounce) package shredded Colby-Monterey Jack cheese
½ (4 ounce) can chopped green chile peppers, drained
24 flour tortillas
2 (10.75 ounce) cans cream of chicken soup
2 cups half and half
1 cup chicken broth
1 (8 ounce) package shredded Colby-Monterey Jack cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 11x15-inch baking dish.
  • Place the chicken breasts in a saucepan with enough water to barely cover; bring to a boil over medium heat. Reduce heat to medium-low and simmer until the chicken is no longer pink in the center, about 15 minutes. Remove from the pan, drain, and shred with two forks. Place the shredded chicken into a bowl and mix with 8 ounces of Colby-Monterey Jack cheese and canned green chilies.

8 ounces pasta (any kind, macaroni, rotini, spaghetti broken into thirds, etc)
6 ounces cooked chicken breasts (chopped or shredded)
2 teaspoons extra virgin olive oil
1/4 cup diced onion
1 stalk celery, finely diced
1 small garlic clove, finely diced
1 (10 3/4 ounce) can cream of chicken soup (or cream of celery, onion or mushroom..they all are good)
1/2 cup heavy cream
2 tablespoons sour cream
1 (15 ounce) can peas
2 cups shredded cheddar cheese
salt and pepper

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta 2 minutes short of package directions and drain.
  • In large saute pan, heat oil over med/high heat and add celery and onion. Cook until softened, then add diced garlic and cook for 1 minute more.
  • Add diced/shredded chicken, cream of chicken soup and peas. Stir to combine. Add the heavy cream, sour cream and 1 and 1/2 cups of the shredded cheddar cheese. Add salt and pepper to taste. Stir and heat through until starting to bubble and cheese is melted.
  • Add the cooked pasta to the pan and stir until all of the ingredients are combined.
  • Spread mixture into a 2 qt casserole dish that has been sprayed with non-stick cooking spray. Sprinkle remaining 1/2 cup (or more which I always do) on top.
  • Bake for 30-40 minutes or until heated through.

My Grandma's Spaghetti Sauce Recipe - (4.5/5) image

Number Of Ingredients 11

1-1/2 to 2 pounds chicken thighs, w/skin & bones
1-1/2 pounds ground chuck or 90% hamburger
1 pound hot Italian sausage bulk or in a tube (sometimes I get the large link and slice it)
1 large onion
7-8 garlic cloves, diced
1 quart tomatoes, stewed or diced
1 small can tomato paste
2 small cans tomato sauce
2 small cans sliced mushrooms
2 T. Italian seasoning
1 t. black pepper

Steps:

  • In large pot simmer chicken in 3-4 quarts of water for about 1 hour. Add water if needed. Remove chicken and set aside. In a separate frying pan, brown hamburger, onions, garlic and sausage until meat is no longer pink. Add to water in chicken stock pot, do not drain grease. Add tomatoes, tomato paste & sauce, mushrooms and seasoning. Simmer for about 45 minutes. Cut chicken off of bones. Discard bones and skin. Cut chicken into bite sized pieces and return to sauce pot. Skim off grease and cook down to desired thickness/consistency.
