Tips:
- For a crispier exterior, brush the roll-ups with melted butter before baking.
- If you don't have a meat mallet, you can use a rolling pin to flatten the chicken breasts.
- To make sure the roll-ups are cooked through, insert a meat thermometer into the center of one of them. The internal temperature should read 165 degrees Fahrenheit.
- The lemon-Dijon sauce is a great way to add flavor and moisture to the chicken roll-ups. If you don't have any lemon juice on hand, you can use white wine vinegar instead.
- If you're using a nonstick skillet, you may not need to use any oil to cook the chicken roll-ups. However, if you're using a regular skillet, you'll need to add a little bit of oil to prevent the roll-ups from sticking.

Chicken spinach roll-ups with lemon-Dijon sauce are a delicious and easy-to-make dish that is perfect for any occasion.
