1 Tbsp ground ancho chili
2 Tbsp smoked paprika
1/2 tsp cayenne
1 Tbsp oregano
1 Tbsp ground black pepper
1 tsp thyme
1 tsp marjoram
1 Tbsp ground coriander seed
1 Tbsp granulated onion
1 Tbsp granulated garlic
6 laurel bay leaves, crumbled (nice if you can find mexican bay leaves)
2 tsp citric acid
1/2 tsp ceylon cinnamon
1/4 tsp nutmeg

Steps:

  • 1. Mix together & store in an airtight glass container. Great on grilled chicken, left over rotisserie chicken, shredded chicken, or ground chicken/turkey, or even black beans, for tacos. Use as much as tastes right. Add salt to taste, if desired. Also great sprinkled on just about any Mexican style dish that needs a bit of zing. Guacamole, in a burrito, or quesadilla, etc.
  • 2. Note: Citric Acid is the type of acid in citrus fruit, that comes in little crystals like salt. It is sometimes called sour salt, because it looks like salt, though it contains no salt. But you can always squeeze fresh lime juice into whatever you are making, instead, if you don't mind the extra liquid.
