2 eggs
2/3 cup milk
3 cups cooked (shredded chicken)
1 can black beans (drained)
1 1/2 cups corn
1 can (4 oz diced green chiles)
2 cans (10 ounces each red enchilada sauce)
1-2 cups shredded cheddar cheese

Steps:

  • Preheat the oven to 375 degrees.
  • Whisk the cornbread ingredients together in a bowl until smooth. Pour the mixture into the bottom of a greased 9x13 casserole dish. Bake for 15-20 minutes until cooked through in the middle and the edges are golden brown. Use the back of a wooden spoon to make a few small holes in the cornbread.
  • Combine the chicken, black beans, corn, green chiles, and half of the enchilada sauce in a bowl. Pour the mixture over the cornbread layer. Top with the remaining enchilada sauce and the cheddar cheese.

¾ cup fire-roasted diced tomatoes
2 ½ cups low-sodium chicken broth, divided
2 tablespoons chili powder
1 teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon onion powder
¼ teaspoon salt
3 cups chopped cooked chicken
1 (15 ounce) can low-sodium black beans, rinsed
1 cup water
1 cup cornmeal or grits
2 scallions, sliced
¾ cup shredded extra-sharp Cheddar cheese, divided
1 egg, lightly beaten

Steps:

  • Preheat oven to 400 degrees F. Coat an 8-inch-square baking dish with cooking spray.

chopped green chili, can (4oz.)
3 green onions, chopped
1 cup whipping cream
1 (8 ounce) jar salsa verde

1/4 teaspoon pepper
1 1/2 cups Mexican blend cheese
