Provided by Martha Rose Shulman

Time 1h45m

Yield Serves 6

Number Of Ingredients 12

1 cup coarse (#3) bulgur
Salt to taste
1 28-ounce can chopped tomatoes with juice
3 tablespoons extra virgin olive oil
3 plump garlic cloves, minced
1/4 teaspoon sugar
1/4 to 1/2 teaspoon ground allspice or cinnamon (to taste)
Freshly ground pepper
1 12-ounce bunch spinach, stemmed and washed thoroughly in 2 changes of water, or 2 6-ounce bags baby spinach
2 teaspoons dried mint or 1 tablespoon chopped fresh mint
1 1/2 cups cooked chickpeas (1 can, drained and rinsed) (optional)
2 ounces Gruyère, or 1 ounce each Gruyère and Parmesan, grated (1/2 cup)

Cook, stirring, until fragrant, about 30 seconds, and add the tomatoes, sugar, salt to taste, and allspice or cinnamon. Bring to a simmer, reduce the heat to medium-low, and simmer until the tomatoes have cooked down to a fragrant sauce, about 20 minutes. Taste, adjust salt and add freshly ground pepper.

BULGUR WITH WILD MUSHROOMS

Bulgur With Wild Mushrooms image

Provided by Marian Burros

Categories     side dish

Time 40m

Yield 10 servings

Number Of Ingredients 10

3/4 ounce dried mushrooms
1/4 cup unsalted butter
3/4 pound onion, diced
2 medium stalks celery, diced
1/4 pound fresh wild mushrooms, preferably cremini, shiitake and chanterelle
1 1/2 cups bulgur
1 3/4 to 2 1/4 cups beef stock
Salt and freshly ground black pepper to taste
1 cup toasted pecans, coarsely chopped
Parsley for garnish

Steps:

  • Soak dried mushrooms in hot water to cover.
  • Heat butter in a skillet large enough to hold all ingredients. Saute onion and celery until soft.

  • Stir in bulgur and cook over medium heat until bulgur begins to color.
  • Stir in beef stock and 1/4 cup of mushroom liquid. Bring to boil, reduce heat to low, cover and cook about 10 minutes, until bulgur grains soften. Season with salt and pepper. Add more mushroom liquid if needed. Freeze if desired.

Tips for Cooking Bulgur:

  • Use the right ratio of bulgur to liquid. The general rule is 1 cup bulgur to 2 cups liquid. However, this can vary depending on the type of bulgur and the desired consistency. Fine bulgur will absorb more liquid than coarse bulgur, and a pilaf will require less liquid than a soup.
  • Rinse the bulgur before cooking. This will remove any impurities and help prevent the grains from sticking together.
  • Toast the bulgur before cooking. This will give it a nutty flavor and help it hold its shape better during cooking.
  • Cook the bulgur over low heat. This will help prevent it from becoming mushy.
  • Let the bulgur rest before serving. This will allow it to absorb any remaining liquid and fluff up.

Conclusion:

Bulgur is a versatile and nutritious grain that can be used in a variety of dishes. It is a good source of fiber, protein, and iron. Bulgur is also low in calories and fat, making it a healthy choice for people who are trying to lose weight or maintain a healthy weight.
