2 Tablespoons coconut oil or olive oil
2 cups of cooked chicken breast (shredded)
1 cup sweet onion (chopped)
2 cloves garlic (minced)
2 cups chicken or vegetable stock
1 28 oz can of whole plum tomatoes
1 12 oz can of diced tomatoes
1/4 cup basil pesto
Parmesan cheese (grated (optional))

Steps:

  • In a stockpot, add olive oil, garlic and onions and cook on medium heat for about 5 minutes.
  • Stir in stock of choice, tomatoes and diced tomatoes.
  • Brig to a boil.
  • Cover pot and simmer for about 15 minutes.
  • In small batches, add the soup to a blender and blend until smooth.
  • Return the soup to pot and add basil pesto and shredded chicken.
  • Simmer for an additional 5-10 minutes.
  • Top with parmesan cheese if desired

2 lbs ground chicken (or what ever ground meat you prefer)
14 ounces mushrooms
1 large red onion, chopped
3 garlic cloves, chopped
1 teaspoon olive oil
salt, to taste
pepper, to taste
1/2 cup marsala wine
3 (14 1/2 ounce) cans diced tomatoes, with juice
4 cups chicken broth
7 large basil leaves, chopped (~ 1 cup)
3 green onions, chopped
1 tablespoon olive oil
2 tablespoons Worcestershire sauce
2 tablespoons hot sauce (or less if you don't want a "bite")
1 tablespoon oregano
1/2 cup parmesan cheese, grated
1 cup mozzarella cheese, shredded
1 cup cooked penne (or your choice of pasta)

Steps:

  • Combine meat, mushrooms, onion, garlic, oil, salt, pepper and wine in a pan and sautee until meat is just about done and veggies are soft.
  • While the meat+ are cooking add the remainder of the ingredients to a crock pot or regular pot.

Coarse salt and freshly ground pepper
2 tablespoons safflower or vegetable oil
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
2 carrots, scraped and sliced
1 tablespoon tomato paste
4 ripe tomatoes, peeled, seeded and chopped
1/2 cup white-wine vinegar
3/4 cup dry white wine
1 teaspoon fresh thyme leaves
1/2 cup creme fraiche
1 cup basil leaves, snipped

Steps:

  • Wipe the chicken pieces dry with paper towels, sprinkle with salt and pepper and brown the pieces a few at a time in the safflower oil in a large skillet. Set the pieces aside and pour off the fat from the skillet.
  • Heat the olive oil in the skillet and gently soften the onion with the garlic and carrots over medium heat. Stir in the tomato paste, tomatoes, vinegar, wine and thyme leaves.
