AWESOME YOGURT COFFEE CAKE WITH BROWN SUGAR-CINNAMON TOPPING
This coffee cake with yogurt has become a family favorite for breakfast. Just the right amount of sweetness with a firm, moist, flavorful cake. I have tried this recipe using different flavors of yogurt - although many seem to have no effect on flavor, the lemon is my favorite.

Steps:
- Mix together brown sugar, walnuts, pecans, flour, butter, and cinnamon for the topping in a bowl until crumbly; set aside.

Steps:
- In a medium bowl mix together the yogurt, ginger root, and maple syrup. In another bowl mix together the pears, cinnamon, sugar and lemon juice immediately.) Pour 1/2 cup of yogurt into each cup or bowl and top with 1/2 cup pear mixture. If desired, sprinkle each serving with optional toppings (granola, flaxseed, chopped nuts, etc.)
Tips:
- For a thicker yogurt, strain it overnight in a cheesecloth-lined colander set over a bowl. This will remove excess whey and result in a more concentrated yogurt.
- To make your own cinnamon sugar, combine 1/4 cup sugar with 1 tablespoon ground cinnamon in a small bowl.
- If you don't have any maple syrup, you can substitute honey or agave nectar.
- To make a vegan version of this recipe, use plant-based yogurt and maple syrup instead of honey.
- For a more decadent treat, top your yogurt with chopped nuts, fresh fruit, or a drizzle of chocolate syrup.

It's a good source of protein, calcium, and probiotics, and it can be customized to your liking with a variety of toppings and flavors.
