3 tablespoons olive oil
4 chicken thighs with skin and bones
Salt and freshly ground black pepper
1 1/2 pounds small red-skinned potatoes, halved
4 large garlic cloves, minced
3/4 cup dry white wine
3/4 cup chicken broth
1 1/2 teaspoons dried oregano
1 teaspoon dried thyme
8 ounces frozen artichoke hearts or 1 cup frozen lima beans, thawed
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 450 degrees F.
  • Heat the oil in large ovenproof pot over high heat. Sprinkle the chicken with salt and pepper. Working in 2 batches if necessary, cook the chicken in the pot until golden brown on all sides, about 10 minutes. Transfer the chicken to a bowl. Carefully add the potatoes to the same pot and cook until they are golden brown, stirring occasionally, about 10 minutes. Add the garlic and saute for 1 minute. Add the wine and stir to scrape up any brown bits on the bottom of the pot. Add the broth, oregano, and thyme. Return the chicken to the pot. Stir to combine. Bring to a boil over medium-high heat.
  • Cover and bake in the oven until the chicken is cooked through, about 20 minutes. Transfer the chicken to a platter. Arrange the potatoes around chicken. Add the artichoke hearts to the sauce in the pot. Cover and simmer over high heat until the artichokes are tender, stirring often, about 4 minutes. Turn heat to low. Stir in the butter. Pour the sauce over chicken and potatoes, and serve.

2 tablespoons all-purpose flour
6 skinless, boneless chicken breast halves - pounded thin
¼ cup unsalted butter
10 fresh mushrooms, sliced
¾ cup dry white wine
¾ cup chicken stock
3 tablespoons chopped fresh parsley
1 teaspoon freshly ground white pepper
6 slices thinly sliced prosciutto
6 slices fontina cheese

Steps:

  • Lightly flour chicken breasts, shaking off excess flour. In a large skillet over low heat, melt butter/margarine. Add chicken and saute until lightly browned, about 2 minutes each side. Remove with slotted spatula and set aside.
  • Increase heat to medium low. Add mushrooms and saute until juices are rendered, about 4 minutes. Add wine and simmer until reduced by 1/4, about 3 to 4 minutes. Increase heat to medium high. Add stock, parsley and pepper and simmer until sauce reduced to 1 cup, about 10 minutes.
  • Reduce heat to low. Top each chicken breast with a slice of prosciutto and a slice of fontina cheese. Return chicken to skillet and cook just until cheese melts. Transfer chicken to individual plates and top each with some of the mushroom sauce before serving.

1/4 teaspoon salt
1/8 teaspoon ground nutmeg
4 teaspoons butter
2/3 cup white wine or reduced-sodium chicken broth
2 tablespoons orange marmalade spreadable fruit
3/4 teaspoon dried tarragon
2 teaspoons all-purpose flour
1/2 cup half-and-half cream

2 1/2 lbs boneless skinless chicken breasts, cut into cubes
6 tablespoons butter, divided
1/3 lb sliced mushrooms
1 clove garlic, minced
1 quart light cream
salt and fresh pepper
2 tablespoons chopped parsley
1 1/2 cups frozen peas
1 cup fresh snow pea
1/8 cup parmesan cheese
1/2 cup shredded provolone cheese or 1/2 cup mozzarella cheese
1/4 cup prosciutto ham, sauteed in some butter,& broken into pieces (imported-buy at deli)
1 lb capellini, cooked

Steps:

  • Saute chicken cubes in 2 Tbsp butter.
  • Remove with slotted spoon and set aside.
  • Saute mushrooms in same skillet.
  • Remove with slotted spoon and set aside.
  • Add 1/4 cup butter, garlic, cream, salt, pepper,& parsley.
  • Boil on high heat just till slightly thickened.

1/2 cup granulated sugar
7 tablespoons unsalted butter, melted and cooled
2 egg yolks
2 teaspoons lemon juice
Grated zest of 1 lemon
1 teaspoon vanilla extract
1/4 teaspoon almond extract
7/8 cup fine yellow or white corn meal
Scant 3/4 cup all-purpose flour
Pinch salt
Butter for greasing the pan
1/4 cup skinned, toasted hazelnuts (or blanched almonds), coarsely chopped
1 or 2 tablespoons brown sugar, preferably unrefined

Steps:

  • In a blender or food processor fitted with a steel blade, grind almonds with 2 to 3 tablespoons granulated sugar to a coarse powder. Add remaining sugar and process to a very fine powder.
  • Transfer to the bowl of a mixer or a large mixing bowl and beat in the butter until blended. Add egg yolks, lemon juice, lemon zest and the vanilla and almond extracts, and mix until well blended. Add cornmeal, flour and salt to almond mixture and stir just until the dough comes together. It is important not to overwork dough.
  • Preheat oven to 350 degrees. Butter a 9- or 10-inch tart or quiche pan, preferably with a removable bottom. Spread dough in pan, using fingers to distribute dough to the edge. Sprinkle with the chopped nuts and brown sugar.
  • Bake 5 minutes. Reduce heat to 300 degrees and bake 45 to 50 minutes longer, until surface is pale golden brown. Cool completely on a rack and cut into wedges to serve.

4 (4 ounce) boneless, skinless chicken breasts
salt and freshly ground black pepper to taste
1 ½ cups butter and garlic croutons
½ cup all-purpose flour
2 large eggs, beaten
3 tablespoons olive oil
½ cup giardiniera
4 slices provolone cheese
2 tablespoons minced fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pound chicken breasts with a meat mallet to an even 1/4-inch to 1/2-inch thickness. Season with salt and pepper on both sides.
  • Pulse croutons in a small food processor until they have a fine consistency. Put flour, eggs, and crouton crumbs into 3 separate shallow dishes.

Steps:

  • Mix the chicken, 1 tablespoon soy sauce, 1 teaspoon cornstarch, and a big pinch of salt and pepper in a bowl until evenly coated. Let sit while you prepare the sauce.

1 pound fresh calf's liver
2 to 4 tablespoons butter, as desired
2 large Spanish onions, sliced lengthwise into thin strips
Salt and pepper, as desired
1 tablespoon vinegar, or as desired
Flour for dredging, seasoned with salt and pepper
2 to 4 tablespoons clarified butter for frying
2 tablespoons chopped parsley

Steps:

  • Trim liver of veins and membranes. Cut on the diagonal into wide, 1/4-inch slices.
  • Melt the butter in a large skillet. Fry the onions in the butter over medium heat, stirring often, until nicely browned, 10 to 15 minutes. Season to taste with salt, pepper and vinegar. Set aside.
