4 boneless skinless chicken breast halves (5 ounces each)
1/4 teaspoon pepper
3/4 teaspoon salt, divided
1 tablespoon canola oil
1 medium sweet potato (about 3/4 pound), peeled and cut into 1/2-inch pieces
1/2 cup plus 3 tablespoons water, divided
1 medium ripe pear, cut into 1/2-inch pieces
1 tablespoon red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon minced fresh tarragon or 1/4 teaspoon dried tarragon

Steps:

  • Pound chicken breasts with a meat mallet to 1/2-in. thickness; sprinkle with pepper and 1/2 teaspoon salt., In a large nonstick skillet, heat oil over medium heat. Add chicken; cook until no longer pink, 3-4 minutes on each side. Remove from pan; keep warm. , In same pan, combine sweet potato and 1/2 cup water; bring to a boil. 4 large skin-on chicken breasts (5 to 6 ounces each)
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1/2 cup rice wine vinegar
1 tablespoon sugar
1/2 teaspoon cumin seeds
1/2 teaspoon coriander seeds, lightly crushed
1 large clove garlic, grated
3 medium underripe Anjou pears, peeled and cut into matchsticks
4 stalks celery, peeled and cut into thin half-moons

Steps:

  • Brown the chicken: Heat a large skillet over medium-high heat and add the canola oil. Arrange the chicken on a tray in a single layer, then sprinkle with salt and pepper. When the oil begins to smoke lightly, use a pair of metal tongs to carefully add the pieces, skin-side down, to the oil. Do not overcrowd the skillet. 2 pounds bone-in, skin-on chicken thighs (4 to 6 thighs)

Steps:

You can also serve the finished product right away, or, as I did, refrigerate and let all the flavors blend for awhile. I made it in morning and heated it up for our evening meal. 2 tablespoons olive oil
1 yellow onion, medium, chopped
2 garlic cloves, crushed (or sliced)
4 boneless skinless chicken breasts (or 1-1/2 to 2-lbs. Pork tenderloins or skinless Salmon fillets)
1/4 teaspoon kosher salt (optional)
2 large sweet potatoes, peeled and cubed
2 large pears, ripe but firm-not soft-peeled, cored, and cubed
2 tablespoons red wine vinegar
1 1/2 teaspoons Dijon mustard
1 1/2-2 tablespoons tarragon leaves, fresh, finely chopped
1/2 teaspoon fresh ground black pepper

Steps:

  • Heat oil in a large skillet over medium heat.
  • Add chopped onion and garlic and saute for about 5 minutes.
  • Sprinkle both side of meat with kosher salt (optional), add to skillet and saute over medium heat until cooked through: about 8-10 minutes per side for chicken; 12-15 minutes per side for pork; 5-7 minutes per side for fish. Be careful not to overcook.

  • Transfer meat, potato and pear to a large bowl.
  • Sprinkle with freshly ground black pepper and toss with vinegar, dijon, tarragon, mixture. At this point you can serve immediately, or, refrigerate and give flavors time to blend and heat through later. I would very loosely cover a baking dish and bake at 325 degrees for around 15-20 minutes.
