2 small cucumbers
3 medium mangoes
1/4 cup roughly chopped cilantro leaves, plus sprigs, for garnish
2 teaspoons powdered dried chile - any medium heat kind is fine
2 limes, juiced
Kosher salt

Steps:

  • Peel and cut the jicama into long thin strips. Slice the cucumbers in half, scoop out the seeds and then cut into strips similar in size to the jicama strips. Peel the mangoes, cut the cheeks off, then slice into wedges. Combine all the ingredients in a large mixing bowl with the chopped cilantro, powdered chile and lime juice. When ready to serve, season with a little salt and garnish with fresh cilantro sprigs.

2 mangoes, that are ripe but firm
2 tablespoons lime juice
2 teaspoons chili powder
1 teaspoon salt

Steps:

  • Peel mangoes, cut along flat side of seed into 2 pieces, Set aside.
  • Grill mangoes on greased grill over glowing coals, 2 to 3 minutes per side (please do not neglect to grease the grill with oil, or the fruit will stick).
  • Remove to platter and sprinkle with lime juice, chili powder and salt.
  • Serve at room temperature.

4 whole sea bream or mackerel , descaled and cleaned (ask your fishmonger to do this)
2 tbsp Cajun seasoning (we used Schwartz)
zest and juice 1 lime
1 tbsp oil
1 ripe mango , peeled, stoned and diced
1 red chilli , deseeded and finely chopped
1 ripe avocado , peeled, stoned and diced
2 spring onions , sliced
small bunch coriander , chopped
200g green bean
rice , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Make 3-4 slashes on each side of the fish. Rub in the seasoning, lime zest and oil, making sure you get it right into the slashes and the cavity. Place on a baking tray lined with foil and bake for 12-15 mins or until just cooked through.
  • Turn the grill to high and cook for 2-3 mins more to char the skin. Cover and rest for a few mins.
  • For the salsa, mix the mango, chilli, avocado, spring onions, coriander and lime juice, and season. Bring a small pan of water to the boil, add the beans and cook for 4 mins, then drain. Serve the fish with rice, beans and salsa.

1 cup diced fresh papaya
1 large red pepper
1/4 cup shredded coconut
1/3 cup diced red onion
1 jalapeno pepper, seeded and minced
2 tablespoons of fresh mint, chopped
1 tablespoon fresh lime juice
1/4 cup olive oil
1/4 cup fresh lime juice
2 tablespoons finely chopped cilantro
1 tablespoon brown sugar
1 shallot, finely chopped
1/2 teaspoon ground cumin
1 teaspoon finely chopped lime zest
salt & freshly ground black pepper
3 large whole boneless chicken breasts (6 breast halves)

Steps:

  • Prepare the marinade: In a small bowl, combine all the marinade ingredients and whisk to combine. Taste for seasoning and adjust if necessary.
  • Place the chicken breasts between two sheets of plastic wrap and pound to flatten slightly with a rolling pin. Chop roasted pepper and combine with remaining salsa ingredients. Mix well, cover and chill until ready to serve.
  • Prepare a charcoal or gas grill for medium high heat grilling. Remove the chicken from the marinade and place on grill rack. Grill, turning once for 7 to 10 minutes on each side, or until juices run clear. Alternatively, you may broil the breasts for 7 to 10 minutes on each side, once again, until the juices run clear.
  • To serve, place the chicken on individual plates and spoon the mango salsa on top.
