CLASSIC CHILI CON CARNE

Classic Chili Con Carne image

This is a classic recipe from Robb Walsh, a Texas food historian and a restaurateur: no beans. In the Texas spirit, it does, however, call for three pounds of meat - boneless chuck, buffalo or venison. There is also some bacon for good measure. This is a hearty meal, great for a cold day when the best thing to do is to stay in and watch that other Texas religion, football.

Provided by Jennifer Steinhauer

Categories     dinner, main course

Time 3h

Yield 8 to 10 servings

Number Of Ingredients 17

3 medium dried ancho chiles, stems and seeds removed, spread flat
1/2 teaspoon cumin seeds
1/2 teaspoon dried Mexican oregano
1/4 teaspoon garlic powder
2 tablespoons cumin seeds
8 ounces bacon
3 pounds boneless beef chuck, buffalo or venison, cut into 1/4-inch cubes
1 pound (2 medium) white onions, chopped
2 teaspoons paprika
1 teaspoon dried Mexican oregano
1 teaspoon ground black pepper
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
4 large garlic cloves, minced
1 3/4 cups beef broth
1 28-ounce can puréed tomatoes
2 ancho chiles, stems and seeds removed

Steps:

  • For the chile powder: Place the chiles flat in a cast-iron skillet over medium heat and cook, turning as needed, until lightly toasted. Transfer to a plate to cool. Put the cumin seeds in the hot pan and stir until fragrant. Transfer to a bowl to cool.
  • Using scissors, cut the chiles into small strips. Using a spice grinder or a clean coffee grinder, grind in batches into a powder. Pour into a bowl. Grind the cumin seeds into a powder and add to the bowl. Add the oregano and garlic powder. If the mixture is still coarse, grind again until fine. Reserve 3 1/2 tablespoons for the chili; save the rest in a jar.
  • For the chili: In a Dutch oven over medium heat, stir the cumin seeds until fragrant, about 1 minute. Pour onto a work surface and using a small, heavy skillet, crush them coarsely. Set aside.
  • Return the pot to medium-high heat, add the bacon and fry until crisp, 5 to 8 minutes. Transfer to paper towels to drain.
  • Increase the heat to high. Working in small batches, add the beef cubes to the pot and cook, stirring, until well browned on all sides. Using a slotted spoon, transfer the beef to a bowl.
  • Reduce the heat to medium, add the onions to the remaining bacon drippings and sauté until lightly browned, about 8 minutes.
  • Add the crushed cumin, reserved chili powder, paprika, oregano, black pepper, thyme, salt and garlic and cook, stirring often, for 1 minute. Crumble in the bacon and add the broth, tomatoes, 1 cup water, anchos and the browned beef. Increase the heat to high and bring to a boil, then decrease the heat to low, cover partly and simmer for 2 hours, until the meat is very tender. Add water as needed to maintain a good chili consistency.
  • Remove the anchos, purée them in a food processor or blender and return the purée to the pot. Stir well, simmer for a few minutes to blend the flavors and serve.

CROCK POT CHILI CON CARNE WITH BEANS

Crock Pot Chili Con Carne With Beans image

I just won "First Place" at a country fair with this recipe. The fresh tomatoes and chili peppers give it a fresh and pleasant taste.

Provided by Jim Trebilcox

Categories     Weeknight

Time 10h20m

Yield 24 serving(s)

Number Of Ingredients 15

1 lb bacon, cut up in small chunks
4 lbs ground beef
4 (1 lb) cans canned kidney beans
28 ounces canned crushed tomatoes (Hunts has them spiced for chili)
12 ounces tomato paste
2 onions, finely chopped
4 ounces chili powder
4 ounces cayenne pepper (dry powder)
2 (10 ounce) cans beef broth
2 fresh tomatoes
2 jalapeno peppers or 2 serrano peppers
3 garlic cloves
1 tablespoon ground cumin
1 tablespoon oregano
1 1/2 tablespoons paprika

Steps:

  • Fry the bacon until it starts to brown, then put it into the crock pot.
  • In the bacon drippings, brown the ground beef.
  • Put the ground beef, beans, crushed tomatoes, tomato paste, onions, chili powder (In Southern California we have a great variety available, but Gebhardt's would work), and the cayenne into the crock pot with the beef broth.
  • Cut the stems off the fresh jalapenos and cut them in two or three chunks.
  • place the peppers along with the garlic and whole fresh tomatoes into a food processor and puree the three ingredients.
  • Put this into the crock pot, stir to mix and let it all cook for 10-12 hours on low or 5-6 hours on high.
  • By making a puree out to of the peppers and garlic, you get a more evenly dispersed blend.
  • I used the tomatoes to give some moisture to the puree.
  • Serrano chilies are three times hotter than jalapenos so don't let their small size fool you.

CHILI CON CARNE (CHILI BEANS) RECIPE - (4.5/5)

Chili Con Carne (Chili Beans) Recipe - (4.5/5) image

Provided by Foodiewife

Number Of Ingredients 30

For the Mexican Seasoning:
1 pound bag pinto beans
2 pounds of ground beef (80% lean recommended)
1 onion, diced
2 garlic cloves, finely minced
2 tablespoons Mexican seasoning (recipe below)
1 large (14.5 oz.) can diced tomatoes (low salt, preferred)
1 large (15 oz.) can tomato sauce
2 Tablespoons tomato paste (TIP: Freeze the remaining tomato paste for future use)
1 large can (7 oz.) diced mild green chilis (not jalapeno)
1 cup salsa (heat level of your choice) or make my homemade version
1/4 cup corn meal (optional to thicken chili) mixed with water
salt
2 Tbsp. chili powder
2 Tbsp. garlic powder
2 Tbsp. ground cumin
2 Tbsp. oregano
For homemade salsa:
(optional, this makes about 32 oz)
1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)**
1 can canned mild green chili works fine, if you can't find Rotel tomatoes)
1/4 cups Chopped Onion (I used red)
1 clove Garlic
1 whole Jalapeno, Quartered And Sliced Thin (use 1/2 for a milder version)
1/4 teaspoons Sugar
1/4 teaspoons Salt
1/4 teaspoons Ground Cumin
1/2 cups Cilantro (more To Taste!)
1/2 whole Lime Juice

Steps:

  • For the chili seasoning: Combine the seasonings into an empty spice bottle (or small mason jar) and shake well. Can be stored for weeks. Leftover spices are perfect for seasoning taco meat or any kind of Mexican themed recipe. For the salsa: NOTE: You don't need to make the salsa for this recipe. I do, because I can use the leftover salsa with chips, which gives me two recipes for one! You only need to rough chop the vegetables and toss them into a food processor, which includes: Onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse just a few times. Add the tomatoes and mild green chilis (or the Rotel tomatoes, if using). Pulse until you get the salsa to the consistency you'd like-I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed. Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos. For the chili: The night before, rinse and drain the pinto beans; check to be sure there aren't any rocks or debris. Heat, covered with water and a pinch of baking soda until boiling. Cover with a lid and reduce to a simmer for about 30 minutes, until the beans are tender. Drain and set aside. To make the "Con Carne": Brown the beef and drain any excess fat; set aside. In a large skillet or pot, heat a little vegetable oil until shimmering. Cook the onion until softened, about 3-5 minutes, on medium heat. Add the minced garlic, until fragrant, about 30 seconds. Add two tablespoons of Mexican seasoning and the tomato paste and cook and stir until well combined-- about 3 minutes. Add the diced tomatoes, tomato sauce and diced green chilis. Bring the meat sauce to a simmer and taste for seasonings. Add more Mexican Spice, if desired and add salt to your personal taste. Add the beans to the "Con Carne" sauce. TIP: I don't add all of the beans, at once. This is where you have control of the bean-to-meat-sauce ratio. Add the salsa and combine. You can add more salsa if you wish, but I always start with about one cup. This gives a nice acidity and balance of flavor to the Chili Con Carne. Pour the Chili Con Carne into a slow cooker and heat on low for 4 hours. Keep on warm, which makes this perfect for a potluck. NOTE: If the chili seems too thin, use 1/4 cup of corn meal and add enough water to create a thick paste. Add one tablespoon at a time, until thickened to your liking. Serve with warm flour tortillas, or with corned bread, or over cooked rice. OPTIONAL: Cook on low on the stove for an hour or two. Freezes well.

Karen's Chili Con Carne Soup image

A delicious and hearty chili con carne that is also easy to make. The small addition of brown sugar and touch of vinegar in combination with the chili powder gives the soup an enticing flavor trio. Add more or less to suit your individual tastes. Offer cornbread like my Mom did and you have a tasty, tempting meal.

CHILI CON CARNE TEXAS STYLE - WITH VENISON

Chili Con Carne Texas Style - With Venison image

The original recipe (I believe it was a Good Housekeeping recipe book) has been modified for venison. Very tasty.

Time 1h20m

Yield 10 serving(s)

Number Of Ingredients 15

2 lbs venison steak
3 medium onions
2 medium green peppers
3 garlic cloves
1/4 cup vegetable oil
1 teaspoon crushed red pepper flakes
2 (28 ounce) cans tomatoes
12 ounces tomato paste
2 cups water
1 tablespoon sugar
1 teaspoon salt
1 teaspoon ground cumin
1/2 teaspoon oregano leaves
1/2 teaspoon fresh coarse ground black pepper
1/4 lb monterey jack cheese

Steps:

  • Cube the venison steak (1/4 inch cubes); dice the onions and green peppers; mince the garlic; shred the monterey jack cheese.
  • In a large pot, over medium high heat, in the vegetable oil, cook the venison cubes (a third at a time), stirring frequently until browned on all sides, removing venison to a bowl as it browns; set aside;.
  • Reserve 1/2 cup diced onions for sprinkling over chili later. In the pan drippings in the large pot, over medium heat, cook the green peppers, garlic, crushed red pepper, and remaining onions until the vegetables are tender, stirring occasionally, and adding more oil if necessary.
  • Return the meat to the pot; add tomatoes with their liquid and the remaining ingredients except the shredded cheese; over high heat, heat to boiling. Reduce the heat to low, cover the pot and simmer for 1 hour or until the venison is fork tender, stirring occasionally.
  • Serve the chili in bowls and pass the shredded cheese and remaining onions to sprinkle.
  • I always like to make some garlic bread and a salad to go with this. It's really good - especially when the weather is cold (and the fireplace is hot).

Tips:

  • To achieve a richer flavor, brown the beef and sausage before adding the other ingredients.
  • Use a variety of beans for a more complex texture and flavor. Some popular options include kidney beans, black beans, and pinto beans.
  • Add vegetables like bell peppers, onions, and corn to increase the nutritional value and add a pop of color.
  • Spices are essential for a flavorful chili. Common choices include chili powder, cumin, oregano, and cayenne pepper.
  • Simmer the chili for at least 30 minutes to allow the flavors to meld together.
  • Serve the chili with toppings like shredded cheese, sour cream, and guacamole for a customizable meal.

Conclusion:

Chili con carne is a versatile and delicious dish that can be enjoyed by people of all ages. It is relatively easy to make and can be tailored to suit individual tastes. By following these tips, you can create a delicious and hearty bowl of chili that will warm you up on a cold day.
