2 tablespoons Worcestershire sauce
4 teaspoons steak sauce, such as A1
1 teaspoon ground cumin
4 teaspoons onion powder
4 teaspoons freshly ground black pepper
4 teaspoons granulated garlic
2 tablespoons all-purpose seasoning blend
10 pounds ground beef (75/25 shoulder clod)
Cooked bacon strips
Grilled onions
Mild Cheddar cheese slices
Burger buns, split and buttered
Double-fried fresh-cut French fries, for serving
Jimmy's Wrigleyville Grill San Antonio Chili, recipe follows
Cheese sauce, for serving
1 tablespoon vegetable oil
3 pounds ground beef (80/20 shoulder clod)
3 large yellow onions, diced
3 large garlic cloves, minced
2 jalapeño peppers, seeded and chopped
3/4 cup chili powder
3 tablespoons ground cumin
1 teaspoon dried thyme
2 tablespoons brown sugar
10 1/2 cups crushed tomatoes
3 cups ground tomatoes
12 cups cooked pinto beans

Steps:

  • Combine the water, Worcestershire and steak sauce in an electric mixer. Slowly add the cumin, onion powder, black pepper, garlic and all-purpose seasoning and mix for 1 to 2 minutes. Combine with the ground beef.
  • Form the mixture into patties and first grill and then sear the patties. Top the patties with bacon, grilled onions and Cheddar cheese slices; cover and cook until cheese melts. Place buns buttered-side down on griddle to toast. Fill buns with patties. Serve with fries that are topped with Jimmy's Wrigleyville Grill San Antonio Chili and cheese sauce.
  • Heat the oil in a large pot over medium-high heat. Add the beef and cook until browned, about 7 minutes. Add the onions, garlic, and jalapeño peppers; reduce heat to medium and stir in the chili powder, cumin, thyme, and brown sugar. Cook 10 minutes. Add the crushed tomatoes and ground tomatoes. Puree half the beans and add them to the chili along with the remaining whole beans. Bring to a boil, reduce heat and simmer 1 1/2 hours.

1 1/2 lbs lean ground beef
seasoning salt
pepper
4 slices American cheese
1 loaf frozen bread dough, thawed
4 tablespoons butter
1/4 teaspoon garlic powder, more if desired

Steps:

  • Day 1:.
  • Make my chili, recipe #50732, refrigerate or set aside if making the same day (or use your own favorite chili, of course!).
  • The night before, wrap 1 loaf frozen bread dough in plastic wrap, refrigerate overnight to thaw.
  • Day 2:.
  • Make 4 round balls out of bread dough, place on greased cookie sheet, oil dough lightly, cover with plastic wrap and let rise till doubled.
  • About 3 hours.
  • Brush with melted butter and garlic powder, sprinkle with some seasoning salt.
  • Bake about 22 minutes in 350º oven till golden brown. Place on rack to cool.
  • Make 4 patties out of ground beef, season each side with seasoning salt and coarse ground pepper.
  • Cook on the grill or in frying pan till done.
  • Top with cheese.
  • Warm chili in microwave till hot.
  • Top burger on cut bun with chili using a slotted spoon so there isn't too much juice.
  • Enjoy!

8 slices bacon
1 packages french fries
1 pounds ground beef
2 units beef
2 tablespoons chili powder
1 tablespoons grill seasoning
2 tablespoons ketchup
1 units vegetable oil
4 slices cheddar cheese
4 tablespoons unsalted butter
3 cloves garlic
0.5 cups chili sauce
4 units kaiser rolls

Steps:

  • Preheat the broiler to High. Cook bacon in broiler 10 inches about flame for 3-4 minutes on each side until crisp. Remove and put onto a plate.
  • Adjust oven to bake, setting the temperature to the recommended temp on the package of the fries and bake the fries.
  • While the fries cook, make the burgers. Preheat a non-stick skillet over medium-high heat. Mix the beef with the chopped hot dogs, chili powder, grill seasoning, and ketchup. Form 4 large patties.
  • Add a drizzle of vegetable oil once around the skillet and add the patties. Cook the burgers for 6 minutes on each side, then top each with 2 slices of bacon and 1 slice of cheddar cheese. Turn the heat off, cover the pan with a loose piece of foil and let the cheese melt for 1-2 minutes.
  • When the fries are extra crisp remove them from the oven. Place the butter and the garlic in a small dishand. Microwave on high for 20 seconds, and then transfer the fries to a large bowl. Toss the fries with the butter and garlic and chives and season with salt.
  • Slather the chili sauce on top of the bottom Kaiser rolls. Place the burger on the bottom of the roll and set the top of roll on top. Pile fries alongside the burger and serve.

This is 1 of my 2 staple chili sauces. This is a great recipe to keep on hand for those chili cravings. I have used this recipe on hot dogs, brats, fries and hamburgers of all varieties; even over spaghetti. This recipe freezes very well and will last in the freezer up to 6 months as long as it is properly sealed in airtight containers with a piece of plastic wrap inside the container sitting directly on top of the sauce mixture. You can reduce the cooking time by cooking over a higher heat - just make sure to watch the chili closely, stirring often, so it does not burn on the bottom.

1 lb lean hamburger
4 cups water
2 (6 ounce) cans chicken stock (can substitute beef stock)
1 (4 ounce) can tomato paste, plain
1 tablespoon dried onion
1 tablespoon chili powder
1 teaspoon kosher salt
1 teaspoon garlic powder
1 teaspoon cinnamon
1 teaspoon dried parsley
1/2 teaspoon cayenne pepper

Steps:

  • With your clean hands start by adding 4 cups of water, 2 cans of chicken or beef stock and 1 can of regular tomato paste in a large pot. Place the raw hamburger in the liquid and use your hands to break all down so there are no chunks. Add dried onion, chili powder, kosher salt, garlic powder, cinnamon, parsley and cayenne pepper, black pepper and mix well.
  • Simmer uncovered over low heat for 2 hours or until the mixture becomes thick and viscus. Stir often! Taste for seasoning and spice level; add more to suit your taste.
