250 gram asparagus, trimmed, chopped coarsely
3 cup (480g) shredded cooked chicken
200 gram button mushrooms, sliced
1/3 cup finely chopped fresh chives
1/3 cup (80g) light sour cream
1/2 cup (150g) mayonnaise
1 tablespoon lemon juice
1 tablespoon wholegrain mustard

Steps:

  • Cook pasta in large saucepan of boiling water until tender; drain. Rinse under cold water; drain.
  • Meanwhile, boil, steam or microwave asparagus until just tender; drain.
  • Make mustard mayo dressing. Combine the ingredients in a small bowl.
  • Place pasta and asparagus in large bowl with dressing and remaining ingredients; toss gently.

It uses some of my favorite ingredients and I can not wait until late Spring when fresh, local asparagus is in season! A neighboring town, Hadley, Massachusetts is famous for its asparagus and I eat more than my fill every year!

1 lb penne rigate or 1 lb rotini pasta
6 -8 ounces of fully cooked boneless chicken, seasoned to your own taste (Italian seasoning, salt, and garlic work well in this recipe and I use leftover roast chicken)
1 lb fresh asparagus
16 ounces fresh grape tomatoes
2/3 cup fresh basil, chopped
1/2 cup pitted coarsely chopped olive (kalamata or the olives of your choice)
1 cup crumbled feta or 1/2 cup shredded parmesan cheese
1/4 cup lemon juice
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
1 teaspoon salt
1 teaspoon fresh ground black pepper

Steps:

  • Bring 4 quarts of water to boil in a stockpot.
  • Cook pasta according to package directions until al dente.
  • Drain pasta and keep warm.
  • Wash asparagus and remove and discard tough ends.
  • Slice asparagus into one inch pieces.
  • Cook asparagus in a large skillet in shallow water and steam for 1-2 minutes until crisp tender.
  • Drain well and reserve.
  • Chop chicken into one inch pieces.
  • Cut grape tomatoes in half.
  • Combine Italian dressing ingredients in a large bowl.
  • Add cooked pasta and asparagus to the Italian dressing and mix together until everything is evenly coated.
  • Add chicken, tomatoes, basil, olives, and cheese and stir to combine.
  • Serve pasta salad warm or at room temperature.

I like to use a kitchen scissor to cut only the very bottom from the stalk; breaking it off causes more of the bottom to go to waste, which is otherwise perfectly edible. With the smaller, thinner "pencil" asparagus, the stalks are too thin to peel and you need that protective layer so the asparagus keep their shape during cooking. For larger asparagus, where the skin is tougher, I do peel the stalk but leave the tip and an inch or so below the tip, unpeeled. The top is tender enough that it can be cooked as is.

32 stalks small to medium-size green asparagus, washed and ends trimmed
2 lemons, juiced
2 tablespoons white wine vinegar
1 teaspoon honey
2 tablespoons smooth Dijon mustard
4 tablespoons olive oil

Steps:

  • I like asparagus al dente, slightly crunchy. Bring the water to a boil in a large pot over medium heat. Add salt until it tastes like mild seawater. How will you know? Take a little water with a spoon and taste it, then add the sugar.
  • Prepare an ice bath by filling a bowl, large enough to hold the asparagus, with cold water. Add some ice cubes. Plunge the asparagus into the ice bath before cooking. This will help to bring any limp stalks back to life. Remove from the ice bath, plunge them into the boiling water and allow them to cook, 2 to 3 minutes. Use a slotted spoon to remove them from the water, transferring them immediately to the same ice bath. Allow them to sit in the ice bath for a few minutes, swirling them gently in the water to assure they are all cooling quickly in the cold water.
  • The most important step for this dish? Drying the stalks once they are removed from the ice bath. Taking care that no water gets into the final salad is the best way to assure that the maximum flavor will be enjoyed! Transfer the asparagus to a large plate or platter lined with a kitchen towel and refrigerate.
  • In a medium bowl, combine the lemon juice, white wine vinegar, honey and mustard. Stir to blend. Whisk in the olive oil in an even, steady stream. When all of the oil has been integrated, taste and adjust the seasoning, if needed.
  • When ready to serve, remove the kitchen towel from the asparagus and simply toss the asparagus in the dressing to coat them completely. Arrange the stalks on plates and serve.

1 small shallot or 1/2 large shallot, finely chopped
1/3 cup extra-virgin olive oil, eyeball it
1 pound asparagus, thin spears
2 endive, cored and thinly sliced
1/2 small red bell pepper, chopped
1/2 pound bow tie pasta, farfalle, cooked to al dente and cooled
1/2 cup frozen green peas
1/4 cup chopped fla- leaf parsley, a couple of handfuls
3 tablespoons white wine vinegar
Salt and freshly ground black pepper

Steps:

  • Heat shallot and oil in microwave safe covered dish for 30 seconds or in a small pan on the stovetop over medium low heat for 5 minutes. Allow oil to cool back to room temperature.
  • Hold a spear of asparagus at each end and snap it. The spear breaks where the tender tops meet the tough bottoms. Line the broken spear up with the bundle of cleaned asparagus. Cut the spears using the guideline of the snapped spear. Par boil the asparagus tops in 1 inch simmering water covered for 3 to 5 minutes. Cool under cold running water and drain. Cut asparagus into 1-inch pieces on an angle and add to a bowl. Combine chopped, cooked asparagus with shredded endive, red bell pepper, cooked pasta, green peas and chopped parsley. The peas will defrost as you toss salad. Pour vinegar into a small bowl and whisk in cooled shallot oil. Pour dressing over salad and toss. Season salad with salt and pepper, to your taste and toss again.

1 box whole wheat fetuchini 1.5 lb fresh asparagus
2 zuchini, sliced into 1/4 inch strips
2 small/medium red bell peppers (chopped)
6 green onions (thin slices)
2 cups cherry tomatoes (cut in half)
small can of chopped black olives
4 cups grilled chicken breasts
2/3 cup Parmesan cheese
salt and pepper to taste
Basil Sauce to taste
Basil Sauce
1/4 c. fresh basil (chopped)
1 clove garlic (chopped)
2 eggs (may use egg substitute)
1 tsp. dry mustard
1 tsp lemon juice
1 tsp. salt
1 TBS. Red wine vinegar
½ c. fat free sour cream
1/2 c. olive oil

Steps:

  • Cook the fetuchini and drain. Blanch the asparagus. Combine all the ingredients for the salad except the Basil Sauce. For the Basil Sauce: In a blender of food processor combine the basil and garlic and blend for a couple of minutes. Add the eggs and the next four ingredients. Blend. Add the sour cream and oil and blend until you get a smooth texture. Pour the Basil Sauce over the salad until you have the desired moistness. Toss and chill until ready to serve.

3 tablespoons grainy mustard
4 boneless, skinless chicken breast halves (about 1 1/2 pounds)
1 bunch (about 1 pound) asparagus, tough ends trimmed
1 medium red onion, sliced into 1/2-inch-thick rings
Coarse salt and ground pepper
2 ounces blue cheese, crumbled (about 1/4 cup)

Steps:

  • Heat grill to high. In a large, shallow bowl, whisk together 1 tablespoon oil and 2 tablespoons mustard. Add chicken, and turn to coat; set aside to marinate 30 minutes. In another bowl, toss asparagus with 1 tablespoon oil; brush onion slices with residual oil in bowl.
  • Grill asparagus and onion until charred in spots and fork-tender, turning as needed, 8 to 10 minutes. Set aside to cool.

3 tablespoons rice wine vinegar
2 tablespoons grapeseed oil

1 clove garlic, minced
½ teaspoon ground black pepper
3 whole skinless, boneless chicken breasts
1 (12 ounce) bottle teriyaki marinade (such as Lawry's® Teriyaki with Pineapple)
1 (16 ounce) package thin spaghetti
1 large tomato, diced
1 yellow bell pepper, diced
1 cup fresh broccoli florets
½ teaspoon sea salt
½ teaspoon ground black pepper
1 (3 ounce) can chow mein noodles
1 (8 ounce) package snow peas
½ teaspoon chile-garlic sauce (such as Sriracha®)

Steps:

  • Combine soy sauce, rice wine vinegar, grapeseed oil, sesame oil, canola oil, ginger, sugar, garlic, and black pepper in a blender; blend until smooth. Place dressing in the refrigerator for at least 30 minutes.
  • Slice each chicken breast down through the center to split breasts into 6 pieces. Place chicken and teriyaki marinade into a gallon-sized zip-top bag. Seal the bag tightly and shake until chicken is completely coated with marinade. Place in the refrigerator for at least 30 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook thin spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 6 minutes. Drain pasta, rinse with cold water, drain again, and place in the refrigerator until ready to assemble salad.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Place chicken on the preheated grill and cook until no longer pink in the center and the juices run clear, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove to a plate and let rest for 5 minutes. Slice into even strips.
  • Place cold pasta in a large mixing bowl. Add tomato, bell pepper, broccoli florets, salt, and black pepper. Add chilled dressing and mix well with tongs. 1 ½ tablespoons lemon juice

2 cubes chicken bouillon
4 skinless, boneless chicken breasts
¼ cup chopped onion
1 (8 ounce) package vermicelli pasta, broken into 2-inch pieces
1 (14 ounce) can plain artichoke hearts, quartered
1 pint cherry tomatoes

Steps:

  • Whisk olive oil, red wine vinegar, lemon juice, sugar, grated onion, seasoned salt, and basil together in a bowl to make dressing. Transfer to the refrigerator.
  • Combine water and chicken bouillon cubes in a saucepan. Heat over medium heat, stirring until bouillon cubes are dissolved, about 5 minutes. Add chicken breasts and onion; simmer until chicken is no longer pink in the center, about 45 minutes.

1/2 teaspoon salt (for cooking pasta), if desired
2 cups uncooked rotini or rotelle (spiral) pasta (6 oz)
10 asparagus stalks (about 8 oz)
1 clove garlic or 1/8 teaspoon garlic powder
5 oz cooked chicken or turkey
1/2 cup fresh basil leaves
1/2 cup shredded Parmesan cheese (2 oz)
1/4 cup olive or vegetable oil
1 tablespoon grated lemon peel

Steps:

  • Fill a 4-quart Dutch oven about half full of water. Add 1/2 teaspoon salt if desired. Cover with lid; heat over high heat until water is boiling rapidly. Add the pasta. Heat to boiling again. Boil uncovered 9 to 11 minutes, stirring frequently, until tender but not mushy. While water is heating and pasta is cooking, continue with recipe.
  • Break off and discard the tough ends of the asparagus stalks where they snap easily; wash asparagus. Cut asparagus into 1-inch pieces to measure 2 cups. Add asparagus to the pasta during the last 2 to 3 minutes of cooking.
  • Peel and finely chop the garlic. Cut the chicken into 1/2-inch cubes to measure about 2 cups. Tear the basil leaves lengthwise into narrow strips.
  • Place strainer or colander in the sink. Pour pasta and asparagus in the strainer to drain. Rinse with cold water; drain.

Served it with a platter of sliced tomatoes, celery sticks, carrots sticks, torn lettuce, and pickles, with havarti Jalepino cheese slices and whole wheat kieser rolls. and thawed frozen strawberries for dessert!! 4 frozen boneless chicken breast halves
2 lbs fresh asparagus
dried thyme
salt
pepper, freshly ground

Asparagus takes easily to many kinds of seasonings, so after you've tired of having it plain with butter or homemade mayonnaise, try this spicy dressing laced with ginger and chiles. Adding smoked chicken is a nice way to make a more substantial first course or light lunch. You can purchase smoked chicken at better butcher shops or online, but equally good is grilled chicken at room temperature, or cold poached chicken. I sometimes substitute lightly smoked ham or smoked slab bacon, simmered until tender.

3 tablespoons rice wine vinegar

Steps:

  • To make the vinaigrette, put shallots in a small bowl. Add vinegar, sugar, mustard, salt and cayenne and let steep for 5 minutes. Add ginger and garlic, then whisk in sesame oil and vegetable oil. Taste and adjust seasoning.
  • Bring a large saucepan of salted water to a boil. Snap off the tough end of each asparagus spear, then cut each spear into 2-inch lengths. Cut thicker pieces in half lengthwise as necessary so all cut pieces are approximately the same size. Place asparagus pieces into boiling water and cook for 1 minute. Drain and cool under running water. Blot dry.
  • To make the salad, put asparagus in a salad bowl. Season with salt and pepper. Add chile, if using, and crushed peanuts. Dress with half the vinaigrette and toss to coat.
  • Arrange dressed asparagus on a platter or on individual plates. Tear chicken slices into strips and scatter over asparagus. Drizzle a little more vinaigrette over the salad and give it a good squeeze of lime. Garnish with basil, mint and cilantro leaves and serve immediately.

1 pound baby new potatoes
1 (2 1/2-pound) rotisserie chicken
1/3 cup mayonnaise
1/4 cup finely chopped dill
3 tablespoons lemon juice
2 tablespoons Dijon mustard
1/2 teaspoon freshly ground black pepper
1 pound asparagus (about 1 bunch), trimmed
2 cups watercress or baby arugula
1/2 cup mint leaves
Lemon wedges (for serving)

Steps:

  • Set a steamer basket in a large pot filled with about 1" salted water. Cover pot and bring water to a boil. Add potatoes, cover, and steam until just tender, about 10 minutes.
  • Meanwhile, cut breast meat from chicken, remove and discard skin, and slice on the bias into 1/2" slices. Remove legs from carcass, remove and discard skin, and slice meat off bones into 1/2" slices.
  • Whisk mayonnaise, dill, lemon juice, mustard, pepper, and 1/4 tsp. salt in a medium bowl.
  • Add asparagus and chicken slices to potatoes in steamer, cover, and steam until asparagus is crisp-tender and chicken is warmed through, about 3 minutes. Transfer potatoes, asparagus, and chicken to a platter or plates and drizzle with dressing. Top with watercress and mint and serve with lemon wedges alongside.
