2 cups diced honeydew melon
1 English (seedless) cucumber, peeled and diced
1 small onion, diced
1 avocado - peeled, pitted, and chopped
1 jalapeno pepper, seeded and coarsely chopped
1 clove garlic, chopped
¼ cup white balsamic vinegar
1 tablespoon lime juice
salt and freshly ground black pepper to taste

Steps:

1 medium sweet onion, chopped
3 garlic cloves, minced
1 tablespoon olive oil
3 cups frozen peas, thawed
2 cups chicken broth

1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup plain yogurt

Steps:

  • In a large saucepan, saute onion and garlic in oil until tender. Remove from the heat. Stir in the peas, broth, lemon juice, dill, salt and pepper. 4 tablespoons (1/2 stick) unsalted butter
1/2 onion, chopped
3 sprigs thyme, leaves picked
1 small Yukon Gold or 1/2 russet potato, peeled, cut into 1-inch pieces
4 cups low-sodium chicken broth
4 cups chopped mixed wilted greens (such as Boston, romaine, arugula, iceberg, red oak, and/or green oak)
1 1/2 cups frozen peas, thawed
1 teaspoon sugar
Kosher salt, freshly ground pepper
Crème fraîche and chopped fresh chives, tarragon, mint, and/or parsley (for serving)

1 large red chilli , deseeded and finely chopped
1 lemon , zested and juiced
200g baby spinach
2 large ripe avocados , stoned and cubed
1 large cucumber , chopped
1 small garlic clove , crushed
250g natural yogurt
small bunch basil
2 tbsp toasted mixed seeds , to serve

  • Put the feta in a bowl and pour over the olive oil, coriander seeds, chilli and lemon zest. Set aside.
