3 tablespoon oyster sauce
1 tablespoon soy sauce
1 tablespoon Chinese cooking wine (or dry sherry *)
2 teaspoon sriracha sauce (or 1 ½ tsp dried chili flakes, optional)
1 teaspoon sesame oil (optional)
1 teaspoon white sugar
2 cloves garlic (crushed)
1 ½ teaspoon fresh ginger (finely grated)
1½ pound chicken thighs (skinless and boneless)
12 bamboo skewers (soaked in water for 30 minutes)
2 tablespoon vegetable ( or other cooking oil)

Steps:

  • Cut the chicken into 1 - 1.5" pieces.
  • Combine the Marinade ingredients in a bowl.
  • Add the chicken and set aside to marinate for at least 30 minutes, up to overnight.
  • Thread chicken onto skewers.
  • Heat 1 tbsp oil in a large skillet (big enough to fit the skewers) over medium high heat.
  • Cook half the skewers for 3 to 5 minutes on each side until deep golden brown, using spatula to press them so they cook through evenly. Repeat with remaining skewers.

The marinade for this chicken is based on the famous Chinese BBQ Pork (Char Siu), a very popular recipe on my blog! It's sweet, savoury, sticky, laced with Chinese Five Spice. Add your own touch like ginger and chilli for a kick! The red food colouring is optional - it gives the chicken the reddish tinge that Char Siu is known for. 2 garlic cloves (, minced)
2 tsp brown sugar
1 1/2 tbsp honey
1 1/2 tbsp hoisin sauce
2 tsp oyster sauce
1 ½ tbsp light soy sauce ((or all purpose))
1/2 tsp Chinese five spice powder (Note 1)
1/2 tsp sesame oil ((not critical))
Few drops red food colouring (, optional)
750 g / 1.5lb chicken thigh fillets (, skinless boneless (or breast))
1 tbsp vegetable oil
10 - 12 bamboo skewers (, soaked in water for 1 hour (optional))
Green onions / scallions (, finely sliced, for garnish (optional))

Steps:

  • Place Marinade ingredients in a ziplock bag or bowl and mix to combine.
  • Add chicken and mix to coat. Marinade for 3 - 24 hours.
  • Optional: Cut chicken into bite size or large pieces and thread onto skewers. Use 1 skewer for small pieces, 2 for large, like pictured in post.
  • Heat half the oil in a heavy based skillet over medium high heat, or BBQ on medium (if using grill side, brush oil on bars).
  • Remove chicken from marinade (RESERVE for basting) and place in the skillet - cook in 2 batches, don't crowd the pan. Cook for 4 minutes then turn.
  • Use the Marinade to baste the cooked side of the chicken. After 3 minutes, turn the chicken over so the basted side is now cooking again - cook for 1 minute.
  • Baste the chicken, then turn again and cook for 45 sec - 1 min.
  • Transfer chicken to a plate, cover loosely with foil and rest for 5 minutes.
  • Serve, garnished with green onions / scallions if using!

1 tablespoon brown sugar (**)
2 boneless chicken breasts ((cut into cubes))
3 green peppers ((cut into thick pieces))
3 red peppers ((cut into thick pieces))
1 large onion ((cut into thick pieces))
10-12 skewers ((soaked for at least 30 minutes))
2 tablespoons olive oil

Steps:

  • If you are using wooden skewers, it is important to soak them first. You can soak them overnight or at least 30 minutes before making the kebabs.
  • In a small bowl mix together BBQ seasonings.
  • Season chicken with BBQ seasonings. Let the mixture sit for 10 minutes.
  • To a skewer, rotate adding in chicken, peppers, and onions, repeat until the skewers have been filled about 1/2 way (about 3-4 pieces of each).
  • Preheat a grill to 400º Fahrenheit.

1 lb chicken thigh (boneless, skinless or can use breasts )
3 tablespoons soy sauce
1/4 teaspoon powdered ginger
1/2 cup hoisin sauce
1/2 teaspoon white pepper
1 garlic clove, minced

Steps:

  • Cut the chicken pieces into long thin strips, 3-4 per piece.
  • In a large bowl or zip top bag, combine the soy sauce, ginger, hoisin sauce, white pepper, and garllic.
  • Place 2 TB of the marinade in a small covered bowl.
  • Refrigerate until it is time to cook the chicken.
  • Add the chicken to the remaining marinade in the bag, toss until well coated, push the air out of bag and seal.
  • Marinate for at least 20 minutes - a few hours is nice and overnight even better.
  • Preheat oven to 400 degrees.

  • Discard the marinade and skewer the chicken using a weaving method with the skewer.

1/4 cup vegetable oil
1 tablespoon Asian hot chili sauce, such as Sriracha
1 tablespoon light brown sugar
2 teaspoons soy sauce
1 to 2 cloves garlic
One 2-inch chunk fresh ginger, peeled and roughly chopped
1 small onion, roughly chopped
Kosher salt
1 pound boneless, skinless chicken thighs, cut into twelve 3 1/2 to 4-inch strips
1/2 cup prepared dipping sauce, such as cilantro chutney, sweet chili sauce or ponzu sauce

Steps:

  • Combine the cilantro, oil, chili sauce, sugar, soy sauce, garlic, ginger, onions and 1/2 teaspoon salt in a mini food processor or blender and process until smooth.
  • Drain the skewers and thread a piece of chicken onto each skewer. Place the skewers in a large nonreactive baking dish and rub with the marinade mixture. Cover and marinate in the refrigerator 1 to 2 hours.
  • Preheat a grill or grill pan over medium-high heat. Remove the skewers from the baking dish and discard the marinade. Cook the chicken, turning once, until well charred and cooked through, 4 to 6 minutes per side. Serve with your favorite dipping sauce.

The original has double the amount of sesame oil but I feel a little of that goes a long way...double it if you wish. This can be served hot or cold. It's delicious! Prep time does not include 1 hour marinating time.

1 whole chicken (about 3-3 1/2 lbs.)
2 teaspoons salt
4 cloves garlic, peeled
2 slices fresh peeled ginger
5 tablespoons hoisin sauce
3 tablespoons rice wine or 3 tablespoons dry sherry
1 tablespoon dark soy sauce
1 tablespoon light soy sauce
1 teaspoon chili paste
2 teaspoons sugar
1 teaspoon toasted sesame oil

Steps:

  • Cut the chicken into quarters and rub each piece evenly with the salt.
  • Combine the rest of the ingredients in a blender or food processor and puree them.
  • Place the chicken in a resealable plastic bag and pour the marinade over.
  • Squish around good so the marinade is evenly coating the chicken.
  • Set aside to marinate at least 1 hour at room temperature, or refrigerate overnight.
  • Preheat broiler, light a fire in an open gril or turn on your gas grill.

1 cup corn flour
6 cups oil, for frying
1 onion
2 bell peppers
2 tablespoons soy sauce
2 tablespoons red wine vinegar
2 tablespoons tomato paste
2 tablespoons sugar
½ cup chicken stock
1 ¼ cups pineapple
¼ cup water
¼ cup cornflour, as needed
2 egg yolks
milk

Steps:

  • Season the chicken with salt and pepper.
  • Cut into bite-size chunks.
  • Dunk each chicken piece in the egg yolk, followed by the cornflour. Set aside.
  • Heat the oil in a deep saucepan until it reaches 190°C (375°F).
  • Carefully fry the chicken pieces for around 5-6 minutes, until crispy, slightly golden in colour and cooked throughout.
  • Drain onto a plate covered in kitchen roll.
  • In a large saucepan over a medium heat, add 1 tablespoon of oil and fry the onions and peppers for 2-3 minutes.

Steps:

  • Place all the SAUCE ingrediants into a pan. Bring to a boil and stir every 20 or so seconds until the sugar has dissolved. Allow to partially cool other wise the chicken will start to cook.
  • Cut chicken up into kebab-sized pieces and put into a bowl with the sauce. Leave for 30 minutes at least to marinade.
  • Thread chicken onto wooden (or metal) skewers with pepper into between each piece.
  • Line the base of a grill pan with foil, grill for 10 to 12 minutes turning every 4-5 minutes. Brush sauce on the skewers with a pastry brush every time you turn them, until the chicken is thoroughly cooked.
  • If you are having the suggested side, boil rice until cooked through, (if you don't add too much water, the rice should soak up the water nicely) add the peas and stir until they are cooked. Drain rice.
  • Serve the skewers with the rice and enjoy! Don't forget to let me know what you think!
