2 eggs
½ cup cornstarch
2 ½ tablespoons cornstarch, divided
2 spring onions, finely chopped
1 (3/4 inch thick) slice fresh ginger, finely chopped
2 teaspoons salt
1 teaspoon soy sauce
6 tablespoons vegetable oil
½ cup chicken broth, or as needed
1 tablespoon water

Steps:

  • Combine pork, eggs, 1/2 cup plus 1 1/2 tablespoon cornstarch, spring onions, ginger, salt, and soy sauce in a large bowl. Mix well and form into 8 balls.
  • Heat oil in a large wok over medium heat. Cook meatballs in the hot oil until golden brown, 3 to 5 minutes. Transfer to a paper towel-lined plate using a slotted spoon.

2 large eggs, lightly beaten
2 tablespoons soy sauce
1 teaspoon salt
6 green onions, sliced
2 pounds lean ground pork
2 cans (8 ounces each) sliced water chestnuts, drained and chopped
1 cup dry bread crumbs
SAUCE:
1/4 cup cornstarch
1 cup pineapple juice
1/3 cup sugar
4 teaspoons minced fresh gingerroot
1 can (10-1/2 ounces) condensed beef consomme, undiluted
1/2 cup white vinegar

Steps:

  • Preheat oven to 400°. In a large bowl, combine first 4 ingredients. Add pork, water chestnuts and bread crumbs; mix lightly but thoroughly. Shape mixture into 1-in. balls. Place in a greased 15x10x1-in. pan. Bake 15 minutes., In a 5- or 6-qt. slow cooker, mix cornstarch and juice until smooth. Stir in remaining ingredients. Add meatballs; stir gently to coat. Cook, covered, on low for 3-4 hours or until meatballs are cooked through and sauce is thickened. Freeze option: Freeze cooled meatball mixture in freezer containers. ½ cup uncooked glutinous (sticky) white rice, rinsed
⅔ pound ground pork
2 tablespoons water
1 tablespoon Chinese cooking wine

2 tablespoons cornstarch
3 egg whites
1 tablespoon sesame oil
3 scallions

1/2 lb shrimp
1/2 cup water chestnut
7 cups chicken stock
6 scallions
2 garlic cloves

1 large carrot
2 cups chopped bok choy (or cabbage)
1 cup snow peas

Steps:

  • Prepare the meatballs: Chop the scallions, shrimp, and water chestnuts. Mince the garlic.
  • In a medium bowl, mix the corn starch and soy sauce. Add egg whites, sesame oil, scallions, cilantro, ginger and garlic and blend well.
  • Add shrimp, pork and water chestnuts and mix well. Add salt and pepper to taste. Chill for 30 minutes.

1 teaspoon Chinese 5-spice powder (about 1/3 palmful)
Salt and white pepper
2 inches gingerroot, 1 inch grated and 1 inch sliced
Handful breadcrumbs
4 to 6 thin scallions, 1/2 minced, 1/2 finely chopped
1 egg yolk, beaten
1 to 2 large cloves garlic, 1/2 grated and 1/2 sliced
Sesame oil, for drizzling
Vegetable oil, for drizzling
1 to 2 red chiles (depending on your preferred level of heat), seeded and sliced
2 quarts chicken stock
3 cups shredded baby bok choy
1/4 cup soy sauce
About 1/2 pound spaghetti
Fried onions, such as Durkee, or Chinese fried noodles, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the pork in a bowl and sprinkle with the Chinese 5-spice powder, salt and white pepper. Add the grated ginger, breadcrumbs, finely chopped scallions, egg yolk, grated garlic and a drizzle of sesame oil. Mix together and roll into small meatballs.   • Bring a pot of salted water to a boil and cook the pasta to al dente. Combine the pasta with the sauce and meatballs, and serve in shallow bowls garnished with sesame oil, the thinly sliced scallions and crispy fried onions or fried noodles.

When my neighbor's daughter was dedicated they had a family lunch. I prepared an 8 course Chinese meal for them. Pearl Meatballs were a big hit that day, and I made them for their family many times after that day. The daughter is now in college and I made some last fall for them to take to their tailgate.

1 c glutinous rice, soaked for 2 hours
1 lb ground pork
2 Tbsp soy sauce
3 Tbsp dry sherry
2-3 Tbsp sesame oil
4-5 green onions, chopped
1/2 can(s) water chestnuts, chopped
3 clove garlic, minced
1 large egg
fresh ginger, chopped
kosher salt and freshly ground white pepper to taste
cornstarch
3-4 dried shitake` mushrooms, optional
8-10 dried shrimp, optional
DIPPING SAUCE
6 Tbsp soy sauce
2 Tbsp water
1 Tbsp sugar
1 Tbsp fresh ginger, grated
2 tsp asian chili paste, or more to taste

Steps:

  • 1. Soaked the rice for 2 hours. Mix the rest of the ingredients with ground pork in a mixing bowl and add 1 to 1.5 cups of water. Mix well and let sit for 30 minutes.
  • 2. Spread out the soaked riced onto a plate. Roll the meat into a small ball with the help of a tablespoon.
  • 3. Gently roll the meatball on the plate of rice to cover the meatball. Place onto a plate that can sit inside of the bamboo steamer.
  • 4. Bring 1/2 pot of water to boil and place the stacked bamboo steamer (with the plated meatballs inside) on top. Make sure there's a good seal between the pot and the steamer. Steam for 30 minutes.
  • 5. Take off the steamer from the pot and let it cool. Suggestion for plating: plate the meatballs on top of a bed of shredded lettuce and surround them by green broccoli or shredded green and red bell peppers.
  • 6. DIPPING SAUCE: Mix all ingredients together and serve with pearl meatballs.

Lemongrass-Coconut Noodles with Spicy Chinese Meatballs image

8 ounces Chinese egg noodles
1 tablespoon toasted sesame oil
4 ounces ground beef or veal
4 ounces ground pork
1 tablespoon peeled and finely grated ginger
1 tablespoon fish sauce
1 tablespoon rice wine vinegar
1 teaspoon red chili flakes
1/2 teaspoon toasted Sichuan peppercorns, ground with mortar and pestle
1/2 teaspoon sea salt
Freshly ground black pepper
3 scallions, finely chopped
2 cloves garlic, finely minced
1 large egg yolk
1/2 cup peanut oil, for frying
1 tablespoon peanut oil
1 tablespoon shrimp paste
1 stalk lemongrass, outer leaves discarded, finely chopped
One 14-ounce can coconut milk
1 tablespoon fish sauce
1 tablespoon Sriracha
1/4 cup fresh chopped cilantro leaves

Steps:

  • Bring a large saucepan of water to a boil. Stir in the egg noodles and cook until just tender, about 8 minutes. Drain, transfer to a bowl, drizzle the sesame oil over them, toss to coat, and reserve.

Add the fish sauce, Sriracha and cooked meatballs and briefly simmer to reheat them in the sauce. Transfer the meatballs to a plate. Toss the noodles in the sauce until well coated and hot.
  • Transfer the noodles to a platter, top with the warm meatballs, and garnish with chopped cilantro sprinkled over the top. Serve immediately.
