CHIP SHOP CURRY SAUCE

Chip Shop Curry Sauce image

In the Northern part of England it is very common to go to a fish and chips shop and order chips with curry sauce. The curry sauce you get in chip shops is different from the sort you would get on an actual curry at an Indian takeaway. It tends to be a bit sweeter and considerably more mild in spicy heat. People eat it either poured all over their chips (ie steak fries) of in a pot on the side where they dip their chips. I found this version on a blog and it sounds very close to the type I enjoy.

Time 20m

Yield 20 ounces, 6 serving(s)

Number Of Ingredients 9

1 onion
1 apple, peeled
1 tablespoon curry powder
2 tablespoons oil
2 tablespoons flour
20 ounces water
1 tablespoon tomato puree or 1 tablespoon tomato paste
pepper
lemon juice

Steps:

  • Chop the onion and apple and fry with the curry powder in the oil until tender.
  • Stir in the flour, cook for 2 minutes and then remove from the heat and add the water, tomato purée, pepper and lemon juice to taste.
  • Simmer for 15 minutes.
  • Store refrigerated.

Tips:

  • Use good quality curry powder. A blend of different spices, curry powder is the foundation of this sauce. Look for a curry powder that is fresh and has a vibrant color. Avoid powders that are old or have a dull appearance.
  • Toast your spices. Toasting the spices before adding them to the sauce will help to release their flavor and aroma. This will give your sauce a richer, more complex flavor.
  • Use a variety of vegetables. The vegetables in this sauce add sweetness, texture, and nutrients. Feel free to experiment with different vegetables, such as carrots, celery, and bell peppers.
  • Don't be afraid to adjust the heat level. The amount of chili powder you add to the sauce will determine its heat level. If you like your sauce mild, use less chili powder. If you like it hot, use more.
  • Let the sauce simmer. Simmering the sauce for a while will help to develop its flavor and thicken it. The longer you simmer the sauce, the thicker and more flavorful it will become.
  • Serve with your favorite accompaniments. Chip shop curry sauce is traditionally served with chips (fries), but it can also be served with other dishes, such as rice, chicken, or fish.
