CHIPOTLE RANCH DIP
I came up with a very quick, easy lower-in-fat dip or sauce to make with those leftover chipotle peppers. This dip combines the smoky chipotle with the great seasoning of ranch dressing mix. Makes a great veggie dip, or even a topping on hamburgers or Mexican foods. Chipotle peppers are very spicy; start with one and taste. Removing seeds will tone down the heat. I usually use 2 with seeds. You can also substitute low-fat Greek yogurt in place of the sour cream.

- Heat the oil in a large (12-inch) skillet over medium-high heat until shimmering hot. Reduce the heat to medium, add the onion, sprinkle with 1 teaspoons salt, and cook, stirring, until softened and translucent, 4 to 6 minutes. Add the garlic and chili powder and cook, stirring, for 1 minute. Add half of the black beans, the chipotles and adobo sauce, and 3/4 cup water and bring to a boil. Cook until the liquid reduces by about half, 2 to 3 minutes.

SPICY CHIPOTLE BEAN DIP
Healthy, spicy, and very low fat! I think you'll like this if you like a little heat in your dip and, it's a little different than the many other good recipes posted here on 'Zaar. To reduce the heat, you can omit or use less of the adobo sauce, use only 1 chipotle pepper, or use a mild salsa (I like Pace Medium Chunky Salsa and don't measure). I use my favorite brand of refried black beans, but the recipe works just as well with refried pinto beans, which make a great foundation for bean nachos if you don't use too much salsa. Serve with tortilla chips.

FALAFEL WITH CHIPOTLE TAHINI DIP
Provided by Ree Drummond : Food Network
Time 40m
Yield 30 pieces
Number Of Ingredients 17
Steps:
- Special equipment: a deep-fry thermometer
- For the sauce: In the bowl of a food processor, add the tahini, lemon juice, olive oil, garlic, chipotle and adobo sauce and salt and pepper to taste and process until smooth. If it is too thick, add some water a couple tablespoons at a time until it is the consistency of heavy cream. Scrape into a bowl, cover and refrigerate until ready to serve.
- For the falafel: Using the same processor bowl, add the chickpeas and process until coarsely ground. Add the flour, parsley, cilantro, baking powder, cumin, cayenne, scallion, 1 teaspoon salt and 1/2 teaspoon pepper and process until well mixed but not totally smooth. Check the consistency to make sure it will hold together. If it is too dry, add some water a little at a time. Taste and adjust the seasoning.
- Add about 2 inches of vegetable oil to a deep skillet and heat until a deep-fry thermometer registers 325 degrees F.
- Using a small scoop or a tablespoon, scoop out small balls of the falafel mixture and gently drop them into the hot oil. Cook in batches, turning them over from time to time, until golden brown and cooked through, for between 30 and 60 seconds. Drain on paper towels while you cook the rest.
- To serve: Cut the top off each pita and form a pocket. Drizzle some sauce into each pita and add 4 or 5 falafel pieces. Top with the greens, carrots, scallions and plenty more sauce. Alternatively, build a salad with the vegetables, then top with falafel and sauce.

- Choose the right type of chipotle peppers. For a milder dip, use canned chipotle peppers in adobo sauce. For a spicier dip, use dried chipotle peppers. If using dried peppers, be sure to rehydrate them before using.
- Roast the chipotle peppers. Roasting the peppers will help to bring out their smoky flavor. To roast the peppers, place them on a baking sheet and broil on high for 5-7 minutes, or until they are blackened and slightly charred.
- Make sure to remove the seeds and veins from the chipotle peppers before using. This will help to reduce the bitterness of the dip.
- Use a combination of sour cream, mayonnaise, and Greek yogurt. This will help to create a creamy and flavorful dip that is not too heavy.
- Add some lime juice, cilantro, and cumin to taste. These ingredients will help to brighten up the flavors of the dip.
- Serve the chipotle dip with tortilla chips, vegetable crudités, or crackers.
Conclusion:
Chipotle dip is a delicious and versatile dip that can be enjoyed in a variety of ways. With its smoky, spicy, and creamy flavor, chipotle dip is sure to be a hit at your next party or gathering.
