Steps:
- 1. Drain crushed pineapple, reservice juice. In a small bowl, combine onion, avocados, chipotle peppers, salt, cilantro and 2 tablespoons of the reserved pineapple juice.
- 2. Gently mix in mango and crushed pineapple. Serve immediately. Great with chips, fish, pork, or topping for tacos, etc.
Tips:
- For the best flavor, use ripe mangoes. Look for mangoes that are slightly soft to the touch and have a sweet, tropical aroma.
- If you don't have a grill, you can roast the poblano peppers in a 400°F oven for 15-20 minutes, or until they are blackened and blistered.
- To make the guacamole ahead of time, simply prepare the guacamole and store it in an airtight container in the refrigerator for up to 2 days. When you're ready to serve, let it come to room temperature for about 30 minutes before serving.
- Garnish the guacamole with fresh cilantro, chopped red onion, and a squeeze of lime juice before serving.
