Time 10m

Number Of Ingredients 7

1/2 c pineapple, crushed, drain and reserve juice
1/2 c medium sweet onion, minced
4 ripe avocados, coarsely mashed
1 - 2 chipotle pepper in adobo sauce, finely minced (more or less to taste)
1/2 tsp salt
2 Tbsp cilantro, fresh chopped
1 medium mango, ripe, seeded, peeled and diced

Steps:

  • 1. Drain crushed pineapple, reservice juice. In a small bowl, combine onion, avocados, chipotle peppers, salt, cilantro and 2 tablespoons of the reserved pineapple juice.
  • 2. Gently mix in mango and crushed pineapple. Serve immediately. Great with chips, fish, pork, or topping for tacos, etc.

Tips:

  • For the best flavor, use ripe mangoes. Look for mangoes that are slightly soft to the touch and have a sweet, tropical aroma.
  • If you don't have a grill, you can roast the poblano peppers in a 400°F oven for 15-20 minutes, or until they are blackened and blistered.
  • To make the guacamole ahead of time, simply prepare the guacamole and store it in an airtight container in the refrigerator for up to 2 days. When you're ready to serve, let it come to room temperature for about 30 minutes before serving.
  • Garnish the guacamole with fresh cilantro, chopped red onion, and a squeeze of lime juice before serving.

Conclusion:

This Chipotle Mango Guacamole is a delicious and refreshing twist on the classic guacamole recipe. The combination of sweet mangoes, smoky poblano peppers, and creamy avocado makes for a flavorful and unique dip that is perfect for any occasion. Whether you're serving it at a party, a potluck, or just as a snack, this guacamole is sure to be a hit.
