2 tbsp. GOYA® Lemon Juice
1 medium red onion, thinly sliced
1 large tomato, seeded and chopped
¼ cup fresh cilantro, chopped
1 tbsp. finely chopped chives
1 tsp. GOYA® Minced Garlic
GOYA® Adobo All-Purpose Seasoning with Pepper, to taste
¼ cup chopped cooked bacon(optional)

Steps:

  • Step 1 Fill large pot with water; bring to boil over high heat. Add potatoes; return water to boil, reduce heat to medium low and simmer until potatoes are fork- tender, about 15 minutes. 4 large russet potatoes, about 2 1/2 pounds, peeled and thinly sliced
Salt
2 chipotles in adobo sauce, chopped, plus 2 tablespoons of sauce
3 tablespoons orange marmalade
3 tablespoons orange juice
3 tablespoons red wine vinegar
3 tablespoons extra-virgin olive oil. eyeball it
1 small red onion or 1/2 large, chopped
Handful chopped cilantro leaves, 2 tablespoons
Couple sprigs fresh oregano, finely chopped (or a couple pinches dried)
Salt and pepper

Steps:

  • Place potatoes in a pot and cover with water. Bring water to a boil and season water liberally with salt and cook the potatoes until just fork tender, 8 to 9 minutes.
  • Combine chipotles, sauce, marmalade, juice, vinegar in a bowl then whisk in the extra-virgin olive oil.

6 strips bacon
1/2 cup finely diced green bell pepper
1/4 cup finely diced red onion
chives for garnish
1/2 cup mayonnaise
1/4 cup lime juice
3 chipotle peppers in adobo
1/4 cup cilantro
1/4 cup green onion
2 cloves garlic
1/2 teaspoon salt (plus more to taste)

Steps:

  • Add the potatoes to a large bot and cover with water. Bring the water to a boil and then add a generous sprinkle of salt. Let the potatoes boil in the salted water for 12-15 minutes or until fork tender. Drain the potatoes and let cool.
  • Slice the bacon into lardons and then add it to a skillet heated over medium heat. Cook until crispy, stirring occasionally to make sure that it does not burn. Set a bit of bacon aside for garnish.

2 ounces, about 3 tablespoons, sliced jarred or canned hot peppers: jalapenos, hot pepper rings, hot cherry peppers, your choice
1 small red bell pepper, seeded and chopped
4 scallions, chopped
A splash hot pepper juice, from jar or can
3 tablespoons cider or wine vinegar, eyeball it
1/4 cup extra-virgin olive oil, eyeball it

1 tablespoon sugar

3 pounds Yukon Gold potatoes, peeled, quartered, and sliced into 1/4-inch pieces
1 tablespoon kosher salt, or more to taste
1 tablespoon dried mint, divided
½ cup mild olive oil, divided
1 large red onion, diced
½ cup diced red bell pepper
2 cloves garlic, minced
⅓ cup lemon juice, or more to taste
½ cup thinly sliced green onions
¼ cup chopped fresh mint
2 tablespoons chopped fresh Italian parsley
¼ teaspoon freshly ground black pepper
¼ teaspoon Aleppo chili flakes
1 pinch cayenne pepper

Steps:

  • Transfer sliced potatoes into a large pot with enough cold water to cover the potatoes by a couple of inches. Stir in 1 rounded tablespoon kosher salt and 2 ½ teaspoons dried mint. Bring to a boil over high heat. Reduce heat to medium and let cook until tender, about 15 minutes, checking every 5 to 6 minutes for doneness. Drain well.
  • Transfer cooked potatoes to a large mixing bowl and let cool slightly.
