1 boneless pork shoulder butt roast (3 pounds)
2 tablespoons steak seasoning
1/2 cup water
1 half-pint jar Pomegranate Jelly or 1 cup red currant jelly
3 tablespoons minced chipotle peppers in adobo sauce
10 kaiser rolls, split
Deli coleslaw, optional

Steps:

  • Cut roast in half. Place in a 5-qt. slow cooker; sprinkle with steak seasoning. Add water. Cover and cook on low for 8-10 hours or until meat is tender., In a small saucepan, combine jelly and peppers. Cook over medium heat for 5 minutes or until heated through. Remove meat from slow cooker; discard cooking liquid. Shred pork with 2 forks. Return to the slow cooker; top with jelly mixture. Cover and cook on low for 30 minutes or until heated through. Spoon about 2/3 cup meat onto each roll. If desired, top with coleslaw.

2 (6 ounce) cans diced green chiles
¾ cup water
6 chipotle peppers in adobo sauce, finely diced and sauce reserved
1 large lime, zested and juiced
1 teaspoon chili seasoning mix
½ teaspoon liquid smoke flavoring

2 tablespoons chili powder
1 tablespoon brown sugar
1-1/2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne pepper
1 large sweet onion, coarsely chopped
2 cans (4 ounces each) chopped green chilies
1 cup chicken broth
14 kaiser rolls, split

1.2kg trimmed pork shoulder joint (weight after cutting away the rind - ask your butcher to do this)
75g ketchup , plus 1tbsp
3 tbsp chipotle paste
3 tbsp honey
1 tbsp red wine vinegar

Steps:

  • Up to two days before (and at least 2 hrs ahead), mix together 75g ketchup with 2 tbsp chipotle, 2 tbsp honey and the vinegar. Rub all over the pork and leave in a food bag (or bowl) in the fridge to marinate, turning occasionally.
  • Heat oven to 160C/140C fan/gas 3. Lift the pork into a snug-fitting roasting tin and baste with any excess marinade, plus 100ml water. Cover with foil, ensuring the pork is sealed in but the foil isn't touching it, and bake for 4 hrs.
