CHOCOLATE PEANUT BUTTER OAT BARS

Sweet and slightly salty oats with a luscious fudgy center. These Chocolate Peanut Butter Oat Bars are a regular thing around our kitchen for obvious reasons.

1 cup coconut oil or butter (*see below for notes on coconut oil)
1/2 cup coconut sugar
1 tsp vanilla
3 cups quick oats
1/2 tsp ground cinnamon
1/4 tsp sea salt
1 cup dark chocolate chips
3/4 cup natural peanut butter (I used chunky)

Steps:

  • Line an 8x8 dish with parchment paper & set aside.
  • In a medium saucepan over medium low heat, melt together the coconut oil (or butter) sugar and vanilla. Stir until the sugar has dissolved and the mixture is smooth. Add in the oats, cinnamon and sea salt. Stir constantly for 4-5 minutes. Remove from the heat.
  • Pour 1/2 the mixture into the bottom of the parchment lined dish and using the back of a spoon, flatten it out evenly. Set the remaining mixture aside.
  • In a small saucepan over medium heat, stir together the chocolate chips and peanut butter and keep stirring until the mixture is smooth and the chocolate is melted.
  • Pour the chocolate/peanut butter mixture over the oat layer in the 8x8 dish, reserving 2-3 tablespoons to drizzle over the top.
  • Crumble the remaining oat mixture evenly over the chocolate layer, then drizzle the last of the chocolate peanut butter over it.
  • Pop into the fridge for a few hours (3-4) to set.
  • Slice into 16 squares. I cut each square into 4 bite sized pieces when I eat it.
  • Store in a covered dish in the fridge for up to a week.

Vegetable oil cooking spray
9 ounces chocolate wafers (about 40 wafers), finely ground (2 cups)
1 1/2 cups old-fashioned oats
1 1/4 cups confectioners' sugar
1/4 teaspoon coarse salt
5 ounces (1 stick plus 2 tablespoons) unsalted butter, cut into small pieces
1 cup chunky peanut butter
3/4 cup plus 3 tablespoons smooth peanut butter
10 ounces semisweet chocolate, melted
1 1/2 ounces milk chocolate, melted

Steps:

  • Coat a 9-by-13-inch baking dish with cooking spray. Line with parchment, leaving a 2-inch overhang on the 2 long sides.
  • Combine wafers, oats, sugar, and salt in a large bowl. Melt butter in a medium saucepan over medium heat, then add chunky peanut butter and 3/4 cup smooth peanut butter, whisking until well combined. Add peanut butter mixture to wafer mixture, stirring until combined. Transfer to baking dish, and use the bottom of a measuring cup or an offset spatula to firmly press mixture into an even layer. Refrigerate for 30 minutes.
  • Pour melted semisweet chocolate over chilled mixture and, using an offset spatula, spread into a thin layer that covers the entire surface. Refrigerate until hardened, at least 15 minutes.
  • Heat remaining 3 tablespoons smooth peanut butter in a small saucepan until runny. Drizzle peanut butter over chilled chocolate. Drizzle melted milk chocolate over peanut butter. Refrigerate until hardened, about 15 minutes.
  • Use parchment to lift out chilled block of bars. Run a sharp knife under hot water, dry well, and cut into 24 squares, wiping knife between cuts. Let bars stand at room temperature for 10 minutes before serving.

These are the *best* bars and so easy to make, the trick to these is not to overbake, mine bake out perfectly in a 350 degree oven, second-lowest rack for 22 minutes, servings is only estimated --- add in 1 teaspoon cinnamon also if desired --- this was developed using full-fat peanut butter :)

1 cup butter or 1 cup margarine, softened
1 cup brown sugar, well packed
1 cup white sugar
1 tablespoon vanilla (can use 1 tablespoon maple syrup or 2 teaspoons maple extract)
2 large eggs
1 1/4 cups peanut butter
2 cups all-purpose flour
1 teaspoon baking soda
2 cups oatmeal (I use half quick cooking and regular oats)
2 cups semi-sweet chocolate chips

Steps:

  • Set oven to 350 degrees.
  • Set oven rack to second-lowest position.
  • Grease a 13 x 9-inch baking dish.
  • In a large bowl using an electric mixer at medium speed cream the butter with both sugars and vanilla until no sugar granules remain (about 4 minutes).
  • Add in the peanut butter and beat until combined.
  • Add in eggs and beat until combined.
  • In a bowl combine the flour with baking soda and oats; add to the creamed mixture and mix on low speed until combined.
  • Mix in chocolate chips.
  • Transfer and spread into prepared baking dish.
  • Bake for 22-25 minutes or until JUST set (do not overbake).
  • Cool then cut into squares.

1 cup butter
½ cup packed brown sugar
1 teaspoon vanilla extract
3 cups quick cooking oats
1 cup semisweet chocolate chips
½ cup peanut butter

Steps:

  • Grease a 9x9 inch square pan.
  • Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.

1/2 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup creamy peanut butter
1 large egg, room temperature
1 teaspoon vanilla extract

ICING:
