My Aunt Jackie used to make THE BEST baked beans whenever we had a family gathering. She'd actually "doctor" canned baked beans by adding brown sugar, ketchup, molasses, mustard, onion, garlic, and LOADS of bacon. 1 lb dried large lima beans, cooked as directed on bag and drained (save the cooking liquid)
1/2 lb cooked ham, cut into small dice (or bacon, cooked and crumbled)
1 small onion, finely diced
1 clove garlic, peeled, smashed and minced
1 1/4 c ketchup
2/3 c your favorite barbeque sauce
1 c dark corn syrup (or molasses)
3/4 c dark brown sugar, packed
1 tsp dried mustard
1 tsp liquid smoke flavoring (or to taste)
2 envelopes ham flavoring

Steps:

  • 1. Heat oven to 350 degrees F. Coat a large baking dish with no-stick spray. Set aside.
  • 2. In a large bowl, combine the lima beans, ham (or bacon), onion, garlic, ketchup, barbeque sauce, corn syrup, brown sugar, mustard, liquid smoke and ham flavoring (I use Goya ham concentrate - pictured). Transfer to the prepared baking dish.
  • 3. Bake for 45-50 minutes or until hot and bubbly. During this step you may have to add some of the reserved cooking liquid so beans don't dry out.
  • 4. HINT: dried lima beans must be washed and soaked overnight then drain soaking liquid. Add about 5-6 cups fresh water and cook for approximately 2 hours or until beans are soft, adding water as needed. Refer to instructions on bean packaging for further details. Please note: COOK TIME listed includes the 2 hour stove top cooking, prep time and baking time
  • 5. For extra flavor, lay slices of bacon on top of beans when ready to bake.
