1 quart heavy cream
1/2 vanilla pod
8 egg yolks

  • Preheat the oven to 250 degrees F. Butter and flour 10 ramekins and set aside.
  • Beat butter and sugar to a soft cream. Add eggs, beating them in one at a time. Add rum and coffee.   • Heat oven to 325°F. Grease bottom and side of 8-inch springform pan or 9-inch round cake pan with shortening. RASPBERRY SAUCE:
1 cup water
2 packages (10 ounces each) frozen sweetened raspberries, thawed
1 tablespoon sugar
3 tablespoons cornstarch
2 tablespoons lemon juice
Confectioners' sugar

Steps:

  • Preheat oven to 325°. In a large bowl, combine cake mix, pudding mixes, eggs, water and oil; beat on low speed 30 seconds. Beat on medium 2 minutes. Fold in chocolate chips., Pour into a well-greased 10-in. fluted tube pan. Bake 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes before removing from pan to a wire rack to cool completely., Meanwhile, place water, raspberries and sugar in a blender; cover and process until well blended. In a small saucepan, combine cornstarch and lemon juice; stir in raspberry puree. Bring to a boil. Cook and stir 2 minutes or until thickened. For the cake:
1 cup (2 sticks) plus 1 tablespoon unsalted butter, at room temperature
2 1/3 cups all-purpose flour
1/2 cup Dutch-process cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
1 3/4 cups buttermilk
2 teaspoons pure vanilla extract
2 1/4 cups light brown sugar
3 large eggs
8 ounces semisweet or bittersweet chocolate, finely chopped, and melted (see Note)
For the frosting:
10 tablespoons (1 1/4 sticks) unsalted butter, at room temperature
1 cup confectioners' sugar
4 ounces bittersweet chocolate, finely chopped, melted, and cooled to room temperature (see Note)
2 tablespoons soy sauce
1 teaspoon pure vanilla extract

Steps:

  • Make the cake: Preheat the oven to 350°F. Grease a 9-by-13-inch glass or metal cake pan with the 1 tablespoon of room temperature butter.
  • Whisk together the flour, cocoa, baking powder, baking soda, and salt in a large bowl. Combine the buttermilk and vanilla in a medium bowl or a 2-cup liquid measuring cup.
  • In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl, if using a handheld mixer), cream the 1 cup of butter and the brown sugar on low speed until creamy and well combined. Increase the speed to medium-high and beat until light and airy, about 2 minutes. Reduce the mixer speed to medium-low and add the eggs one at a time, mixing well between each addition and scraping down the side and bottom of the bowl as needed. Bake until a cake tester inserted into the center of the cake comes out clean and the center of the cake resists light pressure, about 40 minutes. Remove from the oven and set aside to cool completely, at least 2 hours, before frosting.
  • Make the frosting: Put the butter in the bowl of a stand mixer fitted with the whisk attachment (or in a medium bowl, if using a handheld mixer). Beat on medium-high speed until smooth. Turn off the mixer and sift the confectioners' sugar into the bowl and combine on low speed. Add the melted chocolate, soy sauce, and vanilla and beat on low speed until combined. Increase the mixer speed to medium-low and whip until glossy, 15 to 30 seconds.
  • Use an offset spatula or butter knife to spread the frosting on top of the cooled cake. Cut into squares and serve.
  • DO AHEAD: The cake will keep, loosely covered with plastic wrap in the refrigerator, for up to 3 days. Let it sit out at room temperature for 15 to 20 minutes before slicing and serving.

1 teaspoon vanilla extract
6 ounces self-raising flour
2 ounces cocoa powder
4 tablespoons strawberry jam
1 tablespoon boiling water
1 tablespoon cocoa powder
4 tablespoons golden syrup
1 tablespoon icing sugar

Steps:

  • Cream the butter and caster sugar until white and fluffy.
  • Beat each egg individually into the mix.
  • Stir in the vanilla extract.
  • Sieve the flour and cocoa powder together and fold in gently.
  • Line two 9" cake tins with greaseproof paper and evenly pour the mixture into both.
  • Pre heat the oven to gas mark 5/190°C/375°F and cook for 25 minutes.
  • Turn the tins after 15 minutes so that the cakes rise evenly.
  • Cool on a wire rack.
  • For the sauce mix the boiling water and cocoa powder together in a saucepan.
  • Add the golden syrup and icing sugar.
  • Bring to the boil stirring so as not to burn the sugar.
  • Allow to cool, it will thicken as it cools.
  • Cover one cake sandwich with the strawberry jam and place the other on top.
  • Cover with the chocolate sauce.

  • For cake:
  • Preheat oven to 350°F. Butter 10-inch-diameter springform pan. Line bottom with waxed paper. Stir butter and chocolate in heavy large saucepan over low heat until melted.   • Frost cake with a crumb coat (a thin layer of frosting to seal in stray crumbs): Gently sweep away any loose crumbs with a pastry brush, then use a small offset spatula to cover the top and sides a with a thin layer of frosting. Refrigerate until set, about 1 hour.
  • Let crumb-coated cake stand at room temperature for 45 minutes. Frost entire cake with remaining frosting in a swirling motion using a large offset spatula. Let stand at room temperature until ready to serve (up to 8 hours).

1/2 cup butter or 1/2 cup margarine
1/2 cup all-purpose flour
4 eggs, separated
1/2 cup sugar

2 tablespoons butter or 2 tablespoons margarine
2 tablespoons light corn syrup
1/2 cup whipped cream
fresh raspberry, if desired
1 (10 ounce) package frozen raspberries, thawed, drained and juice reserved
1/4 cup sugar
2 tablespoons cornstarch
1 tablespoon orange liqueur (to taste) or 1 tablespoon raspberry liqueur, if desired (to taste)

Steps:
