1 cup shortening
1 cup white sugar
½ cup brown sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1 ½ teaspoons salt
1 teaspoon baking soda
1 (12 ounce) bag semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly spray an 18-inch pizza pan with cooking spray.
  • Combine shortening, white sugar, brown sugar, eggs, and vanilla extract in a large bowl. Beat with an electric mixer until creamy.

1 package (8 ounces) cream cheese, softened
1/3 cup sugar

1 package (3.9 ounces) instant chocolate pudding mix

  • Press cookie dough onto an ungreased 12-in. pizza pan. Bake at 350° for 15-20 minutes or until deep golden brown. Cool for 5 minutes; gently run a flexible metal spatula under crust to loosen. 1/2 cup brown sugar, light and packed
1/4 cup granulated sugar
1/2 cup butter, softened
1 egg
1 teaspoon vanilla extract
1 1/4 cups flour
1/2 teaspoon baking soda
6 ounces semi-sweet chocolate chips (I use milk chocolate)
16 ounces frosting
1/4 cup walnuts, chopped
1/4 cup coconut, flaked and toasted
1/4 cup chocolate candy
candy sprinkles

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, beat together brown & white sugars, butter, egg and vanilla until creamy.
  • Add flour and baking soda, mixing well. The dough will be stiff.
  • Stir in chocolate chips.
  • Spread evenly on a 12 inch pizza pan.
  • Bake 12-15 minutes or until golden brown. (I made this yesterday and mine took 20 minutes in a deep dish pan). It looked a bit undercooked, but after cooling, it made a nice chewy cookie.
  • Cool completely.
  • Spread frosting over top of cookie, leaving a 1/4 inch border around the edges.
  • Sprinkle with optional ingredients if desired.
  • Cut into 16 wedges.

8 ounces cream cheese, room temperature

1/2 teaspoon sugar
2 tablespoons vegetable oil
2 to 2 1/4 cups unbleached all-purpose flour
1/2 teaspoon salt

  • In a large bowl proof the yeast with the sugar in 1/3 cup lukewarm water for 10 minutes or until it is foamy. Stir in an additional 1/3 cup lukewarm water, the oil, 2 cups of the flour, and the salt and blend the mixture until it forms a dough. Knead the dough on a floured surface, incorporating as much of the remaining 1/4 cup flour as necessary to prevent the dough from sticking, for 5 to 10 minutes, or until it is smooth and elastic.
  • Alternatively, the dough may be made in a food processor. Proof the yeast as described above and in a food processor combine it with the remaining ingredients. Process the mixture until it forms a ball, adding more water, 1 teaspoon at a time, if it is too dry, or more flour, 1 tablespoon at a time, if it is too wet, and knead the dough by processing it for 15 seconds.
  • Put the dough, prepared by either method, in an oiled bowl and turn it to coat it with the oil. Let the dough rise, covered with plastic wrap, in a warm place for 1 hour, or until it is double in bulk, and punch it down.
  • Sprinkle an oiled 14-inch black steel pizza pan or black steel baking sheet with the cornmeal. roll out the dough on a lightly floured surface into a 14-inch round and fit it into the pan. Sprinkle with chocolate chips.
  • Bake the pizza on the bottom shelf of a preheated 500 degree electric oven or on the floor of a preheated 500 degree gas oven for 10 to 15 minutes.
