Steps:

  • Combine shredded coconut, coconut cream, maple syrup, and a pinch of salt to a food processor and blend until mixture becomes easily moldable. You may have to press down the mixture and reblend a few times for this to happen.

Topping:
1/3 cup coconut cream
1 large egg white
1/2 teaspoon vanilla extract
1 1/2 cups sweetened shredded coconut
2 teaspoons all-purpose flour
One 4-ounce bar bittersweet or semisweet chocolate, coarsely chopped
Base:
1/4 cup all-purpose flour, plus more for rolling dough
1/3 cup natural unsweetened cocoa powder (not Dutch process)
1/4 teaspoon fine sea salt
One 1-pound package prepared refrigerated sugar cookie dough

Steps:

  • Preheat the oven to 350 degrees F. Cut a piece of foil 9- by 23-inches. Butter the corners and sides of a 9- by 9-inch baking pan. Line the pan with the foil, leaving an overhang on two sides. Fold the overhanging foil to make them doubly thick. (This will make it easier to lift the bar out of the pan.)
  • For the topping: Whisk the coconut cream with the egg white and vanilla in a medium bowl. Toss the shredded coconut with the flour in another medium bowl. Stir the shredded coconut mixture into the coconut cream mixture. Set aside.
  • For the base: Whisk the flour with the cocoa powder and salt in a small bowl. Put the cookie dough on a clean work surface and dump the flour mixture on top. Knead the flour mixture and dough together until it is dark and homogenous. Sprinkle a little extra flour on the work surface, and use a rolling pin to gently press and roll the dough into a 7- or 8-inch square; don't worry if it cracks a bit. Put the dough in the prepared pan, using your fingers to press it evenly into the sides and corners.
  • Scatter the coconut topping evenly over the base, making sure you cover the edges well and being sure not to press down so that the coconut mixture lies on top of the dough. Scatter the chocolate on top and press it lightly into the coconut. Bake until the coconut is a toasted golden brown, the topping seems dry and a toothpick inserted in the center comes out clean, about 30 minutes. Cool completely on a rack before gently lifting out of the pan by the overhanging foil, about 20 minutes. Slice into 16 square bars.

Steps:

  • Preheat oven to 350 degrees.

1 cup coconut
1 egg, lightly beaten

1 1/2 tablespoons milk, approx

Steps:

  • Combine all of the ingredients (except the icing ingredients) in a bowl and mix well.

1 cup almond flour
1 cup coconut sugar
¾ cup pumpkin puree
½ cup coconut oil
½ cup dairy-free mini chocolate chips
¼ cup tapioca flour
1 egg white
1 ½ teaspoons pumpkin pie spice
1 ½ teaspoons ground cinnamon
1 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking pan or glass dish with cooking spray.
  • Combine almond flour, coconut sugar, pumpkin puree, coconut oil, dairy-free chocolate chips, tapioca flour, egg white, pumpkin pie spice, cinnamon, and almond extract in a bowl; stir until well mixed. Pour into prepared baking pan.
  • Bake in the preheated oven until chocolate chips are melted and top is golden brown, about 30 minutes. Cool until set, about 15 minutes. Cut into bars.

1 1/2 cups graham cracker crumbs
1/2 cup brown sugar
1/3 cup melted butter (no substitutions)
2 2/3 cups flaked coconut
1 (14 ounce) can sweetened condensed milk
chocolate chips, for topping (any amount desired)

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-in baking pan.
  • FOR CRUST: Mix together, the crumbs, brown sugar and the melted butter.
  • press gently into the bottom of prepared baking pan.
  • Bake for 10-15 mins; remove from oven.
  • FOR TOP LAYER: Combine the coconut and the milk.
  • Gently spread over the crumb crust.
  • Return to oven, and bake for another 15 mins.
  • Remove from oven, sprinkle with chocolate chips (any amount desired).
  • Allow the chocolate to melt, then spread gently, evenly all over the bars.
  • Cool, cut into bars.

Steps:

  • Preheat oven to 350 degrees F. Oil an 8x8 inch baking pan and line the bottom of the pan with parchment paper.
  • Spread the almonds on a baking sheet and bake until lightly toasted, about 8 minutes. Let cool. On the same baking sheet, spread out the coconut and bake until lightly golden brown, about 4 minutes.
  • Place the Amazin Diced Prunes in a bowl and pour enough lukewarm water to cover and let them soak for 5 minutes. Drain well. In a bowl, mix together the flour, oats, sugar, salt, baking powder, and baking soda. Stir in the almonds and coconut. 2 1/2 c bisquick baking mix
1/2 c firmly packed light brown sugar
1/2 c butter, cut into small pieces
2 c semisweet chocolate morsels
3/4 c chopped pecans, toasted
3/4 c sweetened coconut flakes

Steps:

  • 1. Preheat oven to 350. In work bowl of processor, mix baking mix and sugar; Pulse until blended.
  • 2. Add butter; pulse until mixture is crumbly. Pat mixture into bottom of a 13 x 9 inch baking pan, Bake for 15 minutes or until edges of crust are lightly browned.
  • 3. Sprinkle evenly with chocolate morsels. Bake for 5 minutes or until chocolate begins to melt.
  • 4. Remove pan from oven.
  • 5. Using a small metal spatula, spread chocolate over warm crust. Top with pecans and coconut; gently press into chocolate, using spatula.
  • 6. Cool completely on wire rack, about 1 hour. Chill for 30 minutes or until chocolate sets. cut into 16 bars. For best results, use a small offset metal spatula to spread chocolate and remove bars from pan.
