1¼ cups (2½ sticks) butter, (at room temperature)
1 cup granulated white sugar
1 cup packed light brown sugar
2 large eggs
2 teaspoons vanilla extract
2 cups all purpose flour
¾ cup unsweetened cocoa powder
1 teaspoon baking soda
½ teaspoon salt
One 12 ounce package white chocolate chips
One 11.5 ounce package semi-sweet chocolate chunks

Steps:

  • Preheat the oven to 350 degrees F.
  • In large bowl, cream butter and sugar with an electric mixer until light and fluffy. Add in eggs and vanilla; beat well.
  • In separate bowl, whisk together flour, cocoa, baking soda and salt. Blend into creamed mixture just until combined. Stir in both types of chips.
  • Drop by tablespoonfuls onto ungreased cookie sheets. Bake for 10 to 11 minutes, or until slightly set. Do not overbake! Cookies will be soft, and will puff while baking and flatten while cooling. Cool slightly and then remove from cookie sheet to rack.

S'mores are a way of life for my family. We are always looking for a new way to enjoy them while camping. This variation is one of our favorites. If you have a sweet tooth for chocolate and an average s'more just won't cut it, this one definitely will!

1 tablespoon chocolate-hazelnut spread (such as Nutella®)
2 chocolate chip cookies
1 tablespoon chocolate sprinkles
1 marshmallow

Steps:

  • Spread chocolate-hazelnut spread on the underside of each chocolate chip cookie. Cover with chocolate sprinkles.
  • Place marshmallow on a stick and heat over an open campfire flame until it begins to brown and melt, 1 to 2 minutes.
  • Sandwich the marshmallow between the cookies. Let marshmallow cool briefly before eating, 1 to 2 minutes.

Crust
1 1/2 C flour
1/4 C cocoa
3/4 C sugar
3/4 softened butter

Steps:

  • Mix dry ingredients then cut in butter. Spread mixture in bottom of 9 x 13 pan and press down. Bake at 350 degrees for 15 minutes. Filling 2 - 8 oz. packages of cream cheese 1 C mayonnaise 1 C sugar 4 eggs 2 C melted chocolate chips (12 oz bag) 2 t vanilla Beat softened cream cheese with mayo until smooth. Gradually ad sugar. Add eggs one at a time. Add melted chocolate, then vanilla. Pour finished mixture over crust. Bake at 350 degrees for 35 minutes. Cool to room temperature then chill for 4 hours. Garnish with powdered sugar.

½ cup margarine
3 cups rolled oats
1 teaspoon vanilla extract
3 tablespoons unsweetened cocoa powder
½ cup flaked coconut

Steps:

  • In a saucepan over medium heat, combine sugar, milk, and margarine. Bring to a boil, stirring occasionally, then boil for 4 to 5 minutes. Remove from heat and stir in the oats, vanilla, cocoa and coconut. Spoon onto waxed paper and allow to cool for at least an hour. Store in an airtight container.
