1/2 teaspoon kosher salt
1 stick unsalted butter, softened
1/3 cup confectioners' sugar
1 large egg yolk
1 cup granulated sugar
2 tablespoons light corn syrup
1/4 cup heavy cream
4 tablespoons unsalted butter
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
2 ounces bittersweet chocolate, chopped
1 1/2 cup toasted pecans, chopped
Flaky sea salt, such as Maldon, for serving (optional)

Steps:

  • Crust: Whisk together flour, cocoa powder, and salt until combined. Beat butter with confectioners' sugar on medium speed until pale and fluffy, about 2 minutes. Steps:

  • Heat oven to 350°F.
  • Use pulsing action to blend 2 cups nuts in blender until finely ground. Mix with granulated sugar and butter; press onto bottom and up side of 9-inch pie plate. Bake 12 to 15 min. or until lightly browned. (If crust puffs up during baking, gently press down with back of spoon.) Cool completely.

3 ounces SCHARFFEN BERGER 82% extra dark chocolate, finely chopped
1 1/3 cups granulated sugar
1/3 cup water
1 cup heavy cream, warmed
1 1/2 teaspoons pure vanilla extract
1 large egg
1 large egg yolk
4 tablespoons (2 ounces) unsalted butter, melted and cooled
1 2/3 cups lightly toasted pecan halves
2 tablespoons cacao nibs, chopped (optional)
Cocoa Whipped Cream (optional, recipe follows)
1 cup very cold heavy cream
1 tablespoon plus 2 teaspoons granulated sugar

Steps:

  • To make the crust:
  • Place the flour, sugar, and salt in the bowl of a food processor and pulse two or three times to combine. Add the butter and continue pulsing until the mixture resembles coarse meal. Add the water by drizzling about 1 tablespoon at a time, pulsing after each drizzle. Stop once the dough begins to come together.
  • Transfer the dough to a board and use the heel of your hand or a pastry scraper to press it together. Pat into a disk approximately 6 inches in diameter, wrap in plastic wrap, and refrigerate until firm, about 2 hours.
  • On a lightly floured board, roll out the dough to a 13 to 14-inch circle, flouring the dough and board as necessary to keep it from sticking. Roll up the dough around the rolling pin and unroll it into the tart pan. Gently lift the edges to ease the dough into the corners of the pan, then push the dough down gently to be certain the dough around the sides is 1/4 inch thick. Use a paring knife to cut excess dough from the rim of the pan. If necessary, pat a bit of the dough trimmings into any thin spots. Cover with plastic wrap and refrigerate for 1 hour.
  • Position a rack in the middle of the oven and preheat the oven to 375degreesF. Place the tart pan on a baking sheet.
  • Prick the bottom of the crust with a fork, line with aluminum foil or parchment paper, and fill with pie weights or dry beans. Bake for 15 minutes.
  • Remove the parchment and weights, and continue to bake for 15 to 20 minutes, or until the crust is golden. Sprinkle the chopped chocolate evenly over the bottom of the crust and bake for an additional minute, just to melt the chocolate. Remove from the oven and use the back of a spoon or a small offset spatula to spread the chocolate in an even layer. Let cool on a rack while you prepare the filling. Raise the oven temperature to 400degreesF.
  • To make the filling:
  • In a medium saucepan, combine the sugar and water and stir over medium-low heat until the sugar dissolves. Increase the heat to medium-high and cook, without stirring, swirling the pan so the caramel colors evenly. If sugar crystals form on the sides of the pan, brush with a wet pastry brush. Test the color of the caramel by drizzling a few drops onto a white plate. When the color is medium to dark amber, remove from the heat. Slowly and carefully - it will bubble up - add the cream.
  • Return the caramel to medium heat and cook for 3 minutes to thicken slightly, reducing the heat to medium-low if the caramel bubbles too much. Remove from the heat and cool for 15 minutes.
  • Place the tart shell on a baking sheet.
  • In a medium bowl, whisk together the vanilla, egg, and yolk. Slowly whisk into the caramel. Stir in the melted butter, followed by the nuts and nibs, if using. Pour the filling into the prepared tart shell. The filling will come to the top of the shell. (If the crust has shrunk during baking, it may not hold all the filling.)
  • Bake the tart for 15 minutes. Lower the oven temperature to 375degreesF and bake for an additional 15 minutes, or until the filling is set.
  • Let cool on a rack for about 10 minutes. While still warm, move the tart in the pan to loosen the edges where the caramel has stuck, but keep it in the pan.
  • Let cool completely before removing the tart ring.
  • Serve each wedge of tart with a dollop of the cocoa whipped cream.
  • Cocoa Whipped Cream:
  • Place the cream in a chilled metal bowl or mixer bowl. With a whisk, or the whisk attachment, whip the cream until slightly frothy. Combine the sugar with the cocoa powder. Sprinkle into the cream and continue to whip until soft peaks form. Use immediately, or refrigerate for up to 1 hour.

  • Preheat the oven to 350 degrees F. Make the crust: Lightly coat a 9-inch fluted tart pan with a removable bottom with cooking spray.   • Prepare an ice-water bath, and set aside. Combine the sugar, water, and cream of tartar in a medium saucepan, and bring to a boil over medium-high heat. Wash down the sides of the pan with a pastry brush dipped in water to prevent sugar crystals from forming. Cook, without stirring, until the mixture begins to brown. Gently swirl the pan to color evenly. Remove from heat when the caramel is a rich amber color, and place the pan in the ice bath for 5 seconds to stop the cooking.
  • Allow the caramel to sit until slightly thickened, about 15 minutes. (To test: Dip a wooden spoon into the caramel, and lift it several inches over the pan; if a drip slowly forms and then hardens, the caramel is ready.) When the caramel is ready, dip the pecans, lifting up and swirling slightly to fully coat. Hold the skewer over the pan to allow the drip to lengthen and slightly harden, about 1 minute. If necessary, use a pair of scissors to cut the drip from the caramel remaining in the pan.
  • Place the skewers on an inverted baking sheet lined with waxed paper, and allow the caramel to completely harden, about 5 minutes. If desired, stand the skewers upright in flower foam or a heavy container until ready to serve. Gently remove the skewers before serving.

a little flour , for dusting
185g dark chocolate
50g salted butter
4 eggs , beaten
200ml maple syrup
200g whole pecan nuts

  • Heat oven to 180C/160C fan/gas 4. Roll the pastry out on a lightly floured surface and use to line a 20cm loose-bottomed tart tin. Fill the tart with baking paper and baking beans, bake for 25 mins, then remove the baking paper and beans. Continue to cook for 10 mins more until golden. Remove from the oven and cool.
  • Melt the chocolate and butter together in a large bowl over a pan of simmering water. Whisk the eggs and maple syrup together, then stir into the chocolate with most of the nuts. 20 chocolate wafer cookies, finely crushed (about 1 cup crumbs)
1/2 cup finely chopped pecans
16 KRAFT Caramels
1 pt. (2 cups) whipping cream, divided
1 env. KNOX Unflavored Gelatine
1/4 cup cold water
1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate, coarsely chopped
1 tsp. vanilla

Steps:

  • Preheat oven to 350°F. Microwave 5 Tbsp. of the margarine in medium microwaveable bowl on HIGH 30 sec. or until melted. Add wafer crumbs and pecans; mix well. Press firmly onto bottom and up side of 9-inch pie plate. Bake 10 min. Cool completely; set aside.
  • Place caramels, 2 Tbsp. of the cream and the remaining 1 Tbsp. margarine in small saucepan; cook on low heat until caramels are completely melted and mixture is well blended, stirring frequently. Pour into prepared crust; cool while preparing filling.
  • Sprinkle gelatine over cold water in small saucepan; let stand 1 min. Cook on low heat 5 min. or until gelatine is completely dissolved, stirring frequently. Stir in 1/2 cup of the cream and the chocolate. Cook until chocolate is completely melted, stirring frequently. Cool 15 min. Beat 1 cup of the cream and the vanilla in large bowl with electric mixer on medium speed until thickened. Gradually add chocolate mixture, beating until light and fluffy. Spread over caramel layer in crust. Refrigerate 3 hours or until firm. Beat remaining cream with electric mixer until stiff peaks form. Spoon over pie just before serving. Store leftover pie in refrigerator.

3 cups pecan pieces, divided
1/4 cup butter, melter
1/4 cup granulated sugar
1 (14 ounce) package caramels (the wrapped caramel cubes)
8 ounces semi-sweet chocolate baking squares
2/3 cup whipping cream, divided
1/4 cup powdered sugar
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350F.
  • Put 2 cups of the pecans into a food processor or blender and process until finely ground.
  • Mix pecans with granulated sugar and melted butter and press into a 9-inch pie pan.
  • Bake 12 minutes or until lightly browned (if this puffs up during cooking, just lightly pressed down with a spoon).
  • Microwave caramels and 1/3 of the whipping cream on high 3 minutes or until the caramels are melted, stirring often.
  • Pour into crust.
  • Lightly chop the remaining pecans and sprinkle over the caramel mixture.
  • Put the rest of the whipping cream, chocolates, powdered sugar and vanilla in a sauce pan.
  • Cook over low heat stirring often until the chocolate is melted.
  • Pour the chocolate mixture over the pie and spread to cover.
  • Refrigerate at least 2 hours.

1/2 cup semisweet chocolate chips
2 large eggs, room temperature
3/4 cup dark corn syrup

1 cup pecan halves, toasted
1/4 cup hot caramel ice cream topping
