Vegan. Two ingredients. Low fat. Can you get any better? If you want a vanilla cake or any other cake that's light in colour, do the same thing but use a lemon lime soda or clear birch beer. I suppose you could get creative with this, using cherry, orange, or any other flavoured soda, but this I'll leave that up to you:)

1 (18 1/4 ounce) package chocolate cake mix
1 1/4 cups diet cola

Steps:

  • Mix dry cake mix with soda. Don't pay any attention to adding oil, egg, etc.
  • Pour into floured cake pans, Bundt pan, muffin tins, etc.
  • Bake according to directions on box.

This was my mothers recipe and a favorite of our family. My children, nieces, and nephews still use this recipe today. It has always been a family reunion favorite.

2 c sugar
1 c shortening
2 egg
2 c milk
3 c flour
1 tsp vanilla extract
1/4 tsp clove, ground
1/4 tsp nutmeg
1/2 tsp salt
4 Tbsp cocoa powder
2 tsp baking soda
1/4 c warm water
1 c raisins (optional)
1 c chopped walnuts (optional)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Blend sugar and shortening in large mixing bowl.
  • 3. add eggs, milk, and vanilla. mix well
  • 4. In another bowl mix flour, cloves, nutmeg, salt, and soda.
  • 5. Add wet mixture to dry mixture.
  • 6. Dissolve soda and cocoa into water then add to mixture.
  • 7. Add raisins and nuts
  • 8. Grease and flour 9 by 13 cake pan.
  • 9. Pour batter into cake pan. Tap bottom of cake pan gently on counter to release excess bubbles.
  • 10. Bake on 350 degrees for 45 minutes
